How to Choose Fresh and Delicious Shrimp
- Fresh shrimp have a slightly curved body, and the flesh is firm and tight. The head and legs should be tightly attached to the body.
- The shell of fresh shrimp should be shiny, smooth, and the gills should be bright and clear.
- Avoid buying shrimp that are slimy or have an unusual fishy smell. Shrimp with blackened legs should also be avoided as this is a sign that they are spoiled.

How to Make Bánh Khọt Without Molds

Mixing the Batter
Mix together 300g of rice flour, 100g of crispy flour, 1/2 teaspoon of salt, and 1/2 teaspoon of turmeric powder.
Next, pour in 470ml of sparkling water, and mix until the mixture is smooth and well combined. After that, let the batter rest for 30 minutes in the refrigerator.

Prepare the shrimp
Wash the shrimp thoroughly, then remove the head and antennae, and peel off the shell. Next, slice the shrimp lengthwise into two halves and use a knife to remove the black vein along the shrimp’s back.
Marinate with 1 teaspoon of onion powder, and 1 teaspoon of garlic powder to make the shrimp more fragrant.

Make the dipping sauce
Mix the dipping sauce in a ratio of 1:1:3, including 1 tablespoon of sugar, 1 tablespoon of fish sauce, and 3 tablespoons of water.
Stir this mixture and add 2/3 tablespoon of lemon juice, 4 minced garlic cloves, and 3 minced chili peppers.
Taste and adjust to suit your family’s preference.

Pouring the cake
The batter after resting should be stirred evenly before pouring the cake.
Pour the batter into each mold with an amount of batter according to your preference for thick or thin.
Then, place shrimp on top of the cake until finished.

Baking the cake
Before baking, preheat the oven to 200 degrees Celsius for 12 minutes.
Then place the baking tray inside the oven and bake for about 6 minutes before removing it.

Frying the cake
Pour 2 tablespoons of cooking oil into the pan, and when the oil starts to bubble, add the cakes to fry over medium heat.
Then turn the cakes to ensure they are cooked evenly.
Fry until the cakes are cooked and golden brown around the edges, then remove the cakes to drain the oil.

Place the cakes on a plate, then drizzle some scallion oil and fish sauce on top and enjoy.
