How to choose fresh octopus
- For live octopus: You should choose those with clear eyes, moving quickly and flexibly. Avoid those that move slowly and have dull eyes.
- For frozen octopus: You should choose those with a natural gray-brown color, not too dark or too light. In addition, newly frozen octopus will have bright white flesh, smooth skin, and should not be swollen.
- Do not choose octopus with mushy, non-elastic flesh, slimy, or has a foul smell, unusual color, dark or pale green.

How to choose fresh and delicious water spinach

Prioritize choosing bundles of water spinach with stems only as thick as a rice eating chopstick, avoiding those with unusually large stems. The tips should be small and look a bit firm.

Avoid choosing water spinach that looks too lush and green, as the stems will be very crunchy when broken and the leaves will be dark green. Moreover, you should choose to eat water spinach in season, specifically in the summer from April to June to avoid consuming water spinach that has been treated with chemicals when grown out of season.

Prepare the octopus
After buying the octopus, cut off the beak, eyes, and belly, then wash it clean and let it drain, then cut into bite-sized pieces.
How to clean octopus properly, without odor:
- To remove the slime and the fishy smell of octopus, rub the octopus with 1/2 tablespoon of salt and then wash again with clean water.
- Prepare a pot of boiling water, add a few slices of ginger, then blanch the octopus briefly.
- To keep the octopus firm and crunchy, after blanching in boiling water, transfer the octopus to a bowl of ice water and soak for about 2 – 3 minutes.

Prepare the water spinach
After buying, pick the stems and tops of the water spinach, then wash them thoroughly and let them drain.
Next, put a pot of water on the stove to boil, then blanch the water spinach. To keep the spinach green and crispy, take it out and place it in a bowl of cold ice water. Let it sit for 5 minutes, then transfer the spinach to a colander to drain.

Stir-fry the dish
Heat a pan on the stove and add 3 tablespoons of cooking oil. When the oil is hot, add sliced garlic and sauté until fragrant.
Next, add the octopus and stir-fry. Season with 2 teaspoons of seasoning and stir well to let the octopus absorb the flavors.
