How to choose fresh and delicious ingredients
How to choose delicious and quality quail eggs
- Choose quail eggs with a rough shell and a thin layer of white powder on the surface, as these are good quail eggs.
- When holding quail eggs, they should feel heavy, and if shaken lightly and there is no sound, you should buy them.
- Do not buy eggs with a dark black shell, which feel light when held, and if shaken lightly, you can hear a sound like liquid flowing, as these may be old eggs.
How to choose fresh and delicious Vietnamese coriander
- It is best to choose fresh Vietnamese coriander with small leaves, a distinctive aroma, not wilted, and without any strange smell.
- Do not choose large, shiny leaves of Vietnamese coriander as they are less fragrant and not as tasty as small-leaved ones.
Where to buy butter?
- You can buy vegetable butter at TasteVN, convenience stores, or supermarkets near your home. Additionally, you can also purchase through the website bachhoaxanh.com.
- The price for a jar of vegetable butter ranges from 8,000 VND/jar of 80g to 16,000 VND/jar of 200g (prices updated in November 2021).
How to prepare Fried quail eggs with garlic butter
-
Boil the quail eggs
After purchasing, rinse the quail eggs briefly, then place them in a pot, fill with water, and put on the stove on high heat to boil for 10 – 12 minutes.
Note:- To prevent the eggs from cracking while boiling, add a little salt to the boiling water. If the eggs already have cracks, add a tablespoon of vinegar to the boiling water to prevent the filling from leaking out while boiling.
- After the eggs are cooked, remove them into a bowl of cold water for easier peeling. Use a small spoon to gently tap the top of the egg, peel off the top half, drain the sweet water first, and then peel off the entire shell.
-
Prepare the remaining ingredients
Put a pan on the stove, add 50g of peanuts into the pan, then roast over medium heat until the peanuts are fragrant and golden, then pound them until they break but not too fine.
Peel the garlic and finely chop it, while the shallots should be sliced thinly after peeling. For the Vietnamese coriander, pick the leaves, wash them thoroughly, and then let them dry.
Put the pan on the stove, add 100ml of cooking oil to the pan. When the oil is hot, add the shallots to fry. Use chopsticks to stir continuously so that the shallots are submerged in oil and do not burn.
After the shallots turn golden brown, turn off the heat. Remove the fried shallots and use a strainer to filter out the oil so that the fried shallots are crispy.
-
Make the sauce
Add to a bowl 1 tablespoon of soy sauce, 1 tablespoon of sugar, 1 tablespoon of ground pepper, 1 tablespoon of chili sauce, 1 tablespoon of vinegar, 2 tablespoons of filtered water and stir well to make the sauce mixture.
