How to Make Pickled Radish in Fish Sauce

Prepare the Ingredients
After purchasing the radish, cut off the root and top, then wash it thoroughly several times with water. Use a knife to slice the radish into long strips about 3 finger joints long and about 1/3 of a finger joint thick.
Clean the garlic, peel it, and slice it thinly. Clean the chili, remove the stem, and slice it diagonally.

Marinate and dry the radish
Put the prepared radish into a bowl with 1 tablespoon of salt and mix so that the salt covers the entire radish.
Marinate the radish with salt for about 1 hour and shake occasionally during the marinating process to help the radish absorb the salt quickly.
After 1 hour, rinse the radish several times with water to reduce the saltiness, then use your hands to squeeze the radish to remove excess water.
Next, spread the radish evenly on a tray and dry it under the hot sun for about 1 session until the radish dries but still retains its softness.

Cook the fish sauce
Place a pot on the stove, add 50ml of fish sauce, 80g of sugar, 125ml of water and simmer on medium heat.
Cook until the sugar is completely dissolved and the fish sauce boils, then simmer for another 2 minutes, after that, turn off the heat and let the fish sauce cool completely.

Soak the radish in fish sauce
You take the dried radish from step 2 and place it on a plate, then mix it well with sliced garlic and chili.
Next, gradually layer the dried radish into a glass jar along with garlic and chili, then slowly pour in the cooled fish sauce, cover tightly, and let it soak for 2 days before it can be eaten.
After 2 days, you can store the pickled radish in the refrigerator to preserve it and eat gradually.
