  • Delicious taro roots are those with a rough skin, and still have a lot of hairs and dirt on the surface.
  • You should choose roots that are medium-sized, not too large or too small, because these roots are just ripe, and when eaten will be sweet and fatty, not starchy.
  • At the same time, you should choose roots that have a lot of indentations, as this is a characteristic of a delicious taro root; if the surface of the root is too smooth, you should not buy it.

  • Prepare the ingredients

    Soak 300g of vegetarian minced meat in water for 10 minutes. After 10 minutes, when the minced meat expands, take it out into a basket to drain.

    Peel the taro, wash it clean, and then cut it into small cubes.

    To eliminate the unpleasant smell of straw mushrooms, soak the mushrooms in a diluted saltwater mixture for about 10 minutes, then take them out to drain. After that, slice them about 1/3 of a finger thick.

    Tip: Do not soak the mushrooms for too long as it will make them soggy and lose their crunchiness.

    Chives should be trimmed to remove the yellowed leaves and roots, washed thoroughly, and then chopped finely.

    Place a pan on the stove, adjust the heat to medium, and once the pan is hot, add the rice to roast, stirring constantly to ensure the rice cooks evenly and does not burn. After about 5 minutes, the rice will gradually turn yellow; turn off the heat.

    Place a pot on the stove, bring 5 liters of water to a boil, and once the water is boiling, add all the roasted rice. After cooking for 10 minutes, when the porridge starts to boil, add all the diced taro.

  • Fry tofu skin and stir-fry the ingredients

    Place a pan on the stove, add 200ml of cooking oil, after the oil is hot, add the tofu skin and fry both sides evenly, then remove.

    Reuse the oil that was used to fry the tofu; add chopped scallions and stir lightly, then add the minced vegetarian meat and mushrooms, stir well for about 5 minutes until the mushrooms and minced meat are cooked, then turn off the heat.

  • Complete the porridge

    After cooking the porridge for about 20 minutes, the rice grains are cooked and expanded evenly, add the sautéed mushrooms and minced meat, season with 3 teaspoons of sugar, 2 teaspoons of vegetarian seasoning, and cook for an additional 7 minutes.

    After 7 minutes, taste and adjust the seasoning to suit your family’s preference, then turn off the heat. Serve the porridge in a bowl, place the tofu skin on top, and enjoy.
