How to Choose Fresh Ingredients

How to choose fresh carrots

  • To buy fresh carrots, you should choose those that are new and just harvested. The skin should be bright orange, smooth, and the top leaves should be fresh and green.
  • Choose carrots that are of moderate size; do not select those that are too large. Usually, large carrots with thick tops are older, more fibrous, less sweet, and do not contain many nutrients.
  • Avoid choosing carrots that are soft, misshapen, have many scratches, bruises, or wilted tops; these are carrots that have been stored for a long time or have been damaged during transport, which will not be tasty when cooked.
  • For safety, you should buy carrots from reputable places that are highly rated for product quality!

How to choose quality kohlrabi

  • To buy quality kohlrabi, you should choose those with a light green, bright, natural color. The bulb should be intact, not bruised, eaten by pests, or soft.
  • You should select bulbs of moderate size, not too large or too small, that feel firm and heavy in hand.
  • Delicious kohlrabi will have a characteristic aroma, clear cooking water, and no scum on the surface of the water.
  • You should not buy kohlrabi that has an unusual shape, that is bruised or has been eaten by pests, as these are low-quality kohlrabi.

How to choose delicious white radish

  • You should choose white radishes that have a bright, natural color, are intact, with smooth skin that is not scratched, bruised, or has unusual black spots.
  • Choose white radishes that are straight, elongated, feel solid when held, and are slightly firm to the touch, with a crisp skin.
  • Select white radishes with a firmly attached leaf stem, green leaves, and still retain the small roots around the radish.
  • You should not choose white radishes that are too large, have soft stems, lack leaf stems, or have wilted leaves.
  • Also, do not choose those with thick, large shoulders, as these white radishes tend to be fibrous and bland, not tasty.

Ingredients for the dish of non-sun-dried pickles

  • Making fish sauce

    Next, add 200ml of fish sauce and 300g of sugar into the pot, place the pot on the stove, adjust to low heat and boil for about 5 minutes, then turn off the heat and let it cool completely. Remember to stir well while cooking to prevent the sugar from burning.

    After the fish sauce has cooled, add 2 tablespoons of vinegar and stir well to dissolve the ingredients.
