How to prepare Collagen Hot Pot

Prepare chicken feet and bones
Soak the chicken bones in diluted saltwater, then rinse thoroughly with water and let drain.
For the chicken feet, cut off the nails, rub them with coarse salt, and then wash them really well.
Next, boil a pot of water on the stove and blanch the chicken feet and bones. After blanching, remove them, rinse with cold water, and let drain.

Prepare other ingredients (hot pot ingredients)
Peel the ginger, wash it clean, and then cut it into thick slices. Remove the roots from the green onions, wash them clean, and cut them into pieces about 2 finger joints long.
Wash the beef thoroughly by rubbing it well with 1 tablespoon of salt and then rinse it with water, then let it drain.
Remove the roots from the shiitake mushrooms and enoki mushrooms, clean the sweet cabbage and napa cabbage, soak them in diluted salt water for about 10 minutes, then rinse them once with clean water and let them drain.
Peel the carrot and cut it into small bite-sized pieces.
For 3 pieces of white tofu, cut them into square pieces, fry 1 piece until golden, and leave the other 2 pieces whole.

Simmering chicken feet and bones
Place a clay pot on the stove and add 2 liters of water, then add the chicken feet and bones, ginger, and green onions.
Cover it and simmer on low heat for about 30 minutes, then remove the green onions as simmering too long will make it sour, and continue to simmer for another 60 minutes to extract all the essence from the chicken bones.
After 90 minutes of simmering, start to increase the heat to medium and simmer for another 2.5 hours, which will make the broth turn white and create a sticky consistency.

After enough time simmering the bones and chicken feet, add 2 teaspoons of salt, turn off the heat, and strain the broth. After straining, use a strainer to remove the yellow fat floating on the surface of the broth.
Pour the simmered broth into a container and place it in the refrigerator for 12 hours to allow the broth to solidify, forming a collagen hotpot base with a light jelly-like consistency.
