  • When buying fresh shrimp, you should choose live shrimp with transparent shells, smelling of seawater, with straight bodies, not curled into a circle.
  • Avoid buying shrimp that are leaking water, have curved bodies, and feel gritty when pressed with your hand.
  • Additionally, to choose good shrimp, you should observe the legs, head, and tail of the shrimp. Good shrimp will have tails neatly folded together, with legs and heads firmly attached, not falling off the shrimp body.

  • Avoid choosing fruits that are bruised or have small black spots, or have uneven colors of both green and red.

  • Prepare the shrimp

    Peel the shrimp, remove the heads and legs, then cut along the back of the shrimp with a knife and use the tip of the knife to remove the shrimp vein. After that, wash the shrimp twice with diluted salt water, then drain.

    • You can count back from the shrimp tail to the second groove connecting the two shell segments, insert a toothpick through this spot and gently pull the black vein out.
    • You don’t need to cut the back of the shrimp; you can also use a toothpick to remove the head part of the shrimp body to find the black vein. Gently pull this black thread out and the shrimp is clean.

    Add 1 tablespoon of cooking oil to the pan, when the oil is hot, add minced garlic and fry until fragrant, then add the tomatoes and stir-fry for 2 minutes before adding the shrimp.

    Add 2 teaspoons of sugar, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of salt, and 1 teaspoon of chili powder to the pan, stir well to let the shrimp absorb the seasoning for about 4 minutes, then add the bok choy and stir-fry for another 2 minutes before turning off the heat, sprinkle some coriander and ground pepper on top to finish.

    Tip: You should not stir-fry the bok choy for too long as it will make the bok choy wilt, causing the dish to lose its flavor.
