How to choose fresh squid
- Choose squid that has a shiny skin and is still active, with the squid flesh being white and shiny, do not choose squid that is dull.
- Press it with your hand to test the firmness of the squid. If it quickly returns to its original state when pressed, then it is fresh squid.
- Note that you should only buy squid that has bright, clear eyes and has all the tentacles.
How to choose fresh and delicious shrimp
- When choosing shrimp, you should select those with a translucent shell, avoiding shrimp that have dark spots or inconsistent colors.
- When lifting the shrimp, if you notice a slimy texture, or if the body is bent into a round shape. Gently press with your finger and move it across the shrimp shell; if it feels bumpy, like there are grains in the shell, then do not buy it.
- It is advisable to choose shrimp with their tails closed together; if the tails are spread out, it means the shrimp has been injected with chemicals or water.

Prepare shrimp and squid
To reduce the fishy smell of shrimp, soak them in diluted salt water for about 1 – 2 minutes, then peel off the head and shell, rinse well with water, and let drain.
You should remove the skin, guts, and backbone of the squid, then rinse thoroughly with water several times. Next, to make it crispier and tastier when stir-frying, cut the squid into pieces and make crisscross cuts on the squid body.

Prepare the other ingredients
Peel the carrot, wash it clean, and cut it into strips. Wash the baby corn and cut it in half.
Trim the roots of the leeks and celery, wash them clean, and cut them into pieces about a finger long.
Peel the garlic and mince it finely. Cut the chili pepper, remove the seeds, and slice it into strips.

Stir-fry shrimp and squid with vegetables
Add 2 tablespoons of cooking oil to the pan. When the oil is hot, add the minced garlic and sauté until fragrant. When the garlic is golden, add the carrot and baby corn and stir-fry over medium heat.
Next, add the shrimp and squid and stir-fry until they are firm. Add 1 tablespoon of water to the pan, bring it to a boil, then season with 1/2 teaspoon of seasoning powder, 1/4 teaspoon of pepper, 1 tablespoon of oyster sauce, 1/2 tablespoon of satay, and 1/4 teaspoon of sugar, then mix the ingredients well.
When the seasoning is evenly absorbed, add the leeks, celery, and chili pepper, and stir-fry over medium heat for another 2-3 minutes.

Making mixed pho
To ensure safety, you can blanch the pho in boiling water for 1 – 2 minutes, then remove it and let it drain.
Place the pho on a plate, add the seafood and vegetables on top, and sprinkle with roasted peanuts to complete.
