How to prepare Stewed fish roe with pepper
-
Prepare the ingredients
For frozen fish roe, you should thaw it first, then rinse it with cold water, place it in a colander, and let the fish drain.
Green onions should be washed and cut into pieces about 3 – 4 cm long. Peel the garlic, crush it, and then mince it finely. Chili should also be rinsed briefly with water and sliced.
-
Making the sauce
You prepare half a bowl of filtered water, add 1 teaspoon of seasoning, 1 teaspoon of sugar, 1/2 teaspoon of pepper, 1 tablespoon of fish sauce, and 1 teaspoon of oyster sauce.
Then use a spoon to stir well so that the ingredients can dissolve. You can adjust the quantities of the ingredients to suit your taste.
Place a non-stick pan on the stove and add 1 tablespoon of cooking oil along with 1 tablespoon of sugar to caramelize the fish.
You should continuously stir to prevent the caramel from burning. When the caramel turns a brown color, add the garlic and sauté until fragrant.
Then add the bowl of spice mixture you just made and simmer until it thickens slightly.
-
Proceed with braising fish
Prepare 1 clay pot and place the chopped green onions at the bottom. Then add the fish, sprinkle with 1 teaspoon of seasoning and 1 teaspoon of pepper.
Place the pot on the stove and cook over medium heat; when you see steam rising from the pot, add the sauce made in step 2 into the pot.
Continue to boil until the pot simmers, taste and adjust the seasoning to your liking, and cook until the fish sauce gradually thickens to finish.
Note: You should only cook over low or medium heat because the clay pot retains heat very well, making it easy for the fish to cook unevenly and burn.
-
Finished product
The completed dish will have a beautiful color and an attractive aroma. The fish meat is soft and flavorful; if you can handle spicy food, adding a few slices of chili and ground pepper will surely make your rice disappear quickly.

Prepare the ingredients
Defrost the fish roe, rinse briefly with water to clean it, then wash again with clean water. After that, place it in a colander to drain.
Put the fish in a bowl or plate and marinate it with 1 tablespoon of seasoning and 2 tablespoons of fish sauce. Let it sit for about 10 – 15 minutes for the fish to absorb the spices before proceeding to braise.
Wash the tomatoes with water, then cut them in half, remove the seeds, and cut them into small dice.
Wash the green onions with water and cut them into pieces about 5 – 6 cm long. Peel the shallots, chop one half finely, and cut the other half in half.
-
Proceed to braise fish
Place a pot on the stove, add 1 tablespoon of cooking oil, then add minced shallots and sauté until fragrant. When the shallots are fragrant, add tomatoes and use chopsticks to stir-fry briefly until the tomatoes are soft.
Then add the chopped shallots, and continue to layer the fish on top before lowering the heat to low.
Add the coconut water to the pot, at this point turn the heat to high to bring the fish broth to a boil. When it boils, season with satay, sugar, salt, seasoning powder, and fish sauce to taste.
When the water boils again for the second time, add the halved onion to the pot and simmer for another 1 – 2 minutes to finish the dish.

Braised fish with tomatoes is not only delicious but also nutritious. The tender fish meat blends with the sweet and rich broth, and with a bit of tomato sauce and spicy chili, it will surely satisfy you.
Some notes when processing frozen fish roe
- When choosing fish roe, you should select those with a round and plump body as these are freshly frozen fish and have good meat. Those that are long and flat may have been frozen for a long time, so the fish meat will no longer be delicious.
- You should carefully observe the packaging, as this type of fish is often imported directly, so checking the packaging date and expiration date is very important. You should buy fish at supermarkets or reputable food stores to ensure quality, as using expired fish can be very harmful to health.
- When processing, you only need to thaw and rinse briefly with water; there is no need to gut or rub too hard. When thawed, you should use all of that fish; do not put it back in the refrigerator to ensure quality.
- After washing the fish, you should use a clean towel or paper towel to dry the fish once more.
- Fish roe cooks very quickly, so when making any dish, you must prepare it quickly, as cooking too long will cause the fish meat to dry out and lose its flavor.
