- Touch the mushrooms; if they feel firm and smooth, buy them, but if they feel slimy, it’s best not to purchase.
Tips for choosing shiitake mushrooms:
- Freshly harvested mushrooms usually have vibrant colors and a distinctive aroma. Avoid mushrooms that are bruised or have a rotten smell, as they may be spoiled.
- Dark brown shiitake mushrooms that ooze milky white substance at the cut should not be purchased as this is a sign of toxic mushrooms.

How to prepare Mixed Vegetarian Avocado Porridge

Prepare the ingredients
Boil sago in cold water, when it boils, remove it and soak in cold water.
Tear the oyster mushrooms into thin strips, the thinner the better.
Dice 1/4 avocado, green beans, and carrots.
Slice the shiitake mushrooms into thin pieces.
Heat a pan on the stove with 1 tablespoon of cooking oil. Then add the shiitake and oyster mushrooms, stir-frying with 1 tablespoon of vegetarian seasoning and 1/4 teaspoon of pepper.

Cooking porridge
Add 100g of rice and 1 bowl of water into the pot. Stir continuously until the rice expands and thickens, then add 1 – 2 bowls of water and continue cooking. Keep doing this until the porridge is as soft as you desire.
Note:
- When the water starts to boil, keep the heat medium, stirring the porridge frequently every 3 – 5 minutes to prevent it from sticking.
- For abalone porridge, the softer the porridge, the tastier it is.
Tips for quick and soft porridge: There are many ways to make the porridge cook faster, you can apply or combine the methods below for quicker results.
- Soak the rice for 1 hour before cooking to make it softer and cook faster.
- You can pound or lightly grind the rice after soaking.
- You can roast the rice after soaking before cooking to enhance its aroma.
- Another method that few people know is to keep the rice in the freezer for at least one night. Then take it out and boil with water until it boils, then turn off the heat and wait about 15 minutes for the rice to expand. Then continue cooking with other ingredients for 15 minutes.
