How to Cook Braised Vegetarian Mudfish

Prepare the Ingredients
Soak the vegetarian mudfish in water for about 20 minutes after purchasing, then add a little salt and rinse several times to remove the smell. Next, place it in a pan with oil deep enough to cover about one finger and fry on low heat until crispy and delicious, then remove and place on paper towels to absorb the oil.
Finely chop the garlic and shallots.

Make the sauce
Put about 2 tablespoons of fish sauce into a bowl, then add sugar, vegetarian seasoning, pepper, making sure to reserve 2 teaspoons of sugar for caramelizing, and mix the mixture well.

Cook the fish
Add about 2 tablespoons of oil to the pan, add the reserved 2 teaspoons of sugar, cook until it turns a caramel color, then add minced onion and garlic and sauté until fragrant. Next, pour the sauce into the pan and cook until the sauce boils and thickens, then add the vegetarian goby fish and stir well for about 2 – 3 minutes, then turn off the heat and serve on a plate.
