  • Preparation of ingredients

    Carrots should be washed thoroughly and cut into thin strips. The pickled mustard greens should be washed and cut into pieces about the size of a finger joint.

    Bring a pot of water to a boil, then blanch the carrots and mustard greens briefly. When the vegetables are just cooked, remove them and place them in a bowl of ice water to keep them crispy and tasty.

    Dried wood ear mushrooms and dried shiitake mushrooms should be soaked in water until they expand, then sliced thinly.

    How to soak wood ear mushrooms correctly:

    • Soak wood ear mushrooms in cold water for 2 – 3 hours for them to expand. If soaked for too long, it can produce toxins found in wood ear mushrooms.
    • Absolutely do not soak wood ear mushrooms in hot water, as it will stimulate the production of toxins in the mushrooms.
    • After soaking and expanding, wash the mushrooms thoroughly.

    • Rinse the mushrooms briefly with clean water, then boil them in boiling water for about 3 – 5 minutes.

  • Mixing the noodles

    After soaking the dried noodles until they expand, take them out and put them in a bowl. Add 1/2 tablespoon of sugar, 1/2 tablespoon of vegetarian seasoning, 1 tablespoon of soy sauce, 2 tablespoons of chili sauce, 2 tablespoons of ketchup, 2 teaspoons of sesame oil, and 1/2 teaspoon of ground pepper.
