- You can buy live chickens to clean yourself, for convenience you should buy pre-cleaned chickens.
- If you buy pre-cleaned chicken: You should choose local chickens with light yellow skin, do not buy chickens with white skin as they are super-egg chickens, when pressed the meat is still firm.
- If buying live chickens: You should choose those with bright red combs, gently press and feel the chicken breast is full, do not choose those with purple combs, dripping beaks, or rough feathers.
How to prepare Crispy Skin Grilled Chicken using an Air Fryer

Prepare the chicken
After cleaning the feathers, you can rub salt or lemon around the chicken to help reduce the odor, then rinse with water.
Tip for cleaning chicken without odor:
- You should clean the feathers thoroughly, remove the oily glands from the tail, use a mixture of salt and vinegar to wash the chicken.
- After cleaning the feathers, you can soak the chicken in water for about 20 minutes.
- You can clean it by mixing salt, pepper, crushed ginger, and a little white wine for about 30 minutes, then rinse with cold water.

Marinate the grilled chicken
Put lemongrass, ginger, garlic, chili, and shallots into a multi-purpose blender to grind finely. Then add 2 teaspoons of seasoning, 1 teaspoon of sugar, 1.5 tablespoons of soy sauce, 1/2 tablespoon of oyster sauce, and 1/2 tablespoon of plum sauce, then continue to blend the mixture until well combined.
Here’s a tip:
- If you don’t have a multi-purpose blender, you can chop the ingredients finely and then mix them with the spices.
- You can replace plum sauce with chili sauce, but the flavor will not be as authentic.
Spread the blended sauce over the chicken meat, avoiding the skin. Add 1 tablespoon of cooking oil to the mixture so that the chicken does not dry out, and evenly coat the mixture onto the chicken.
Then sprinkle 1 teaspoon of salt over the chicken skin and spread it evenly to make the skin crispier. Marinate for about 1 hour to allow the chicken to absorb the flavors.

Grill the chicken
Put the chicken in the air fryer, pour all the remaining sauce mixture over the chicken, cover it and grill the chicken at 200 degrees Celsius for 10 minutes.
Then brush oil over the meat so the chicken tastes better, then continue to cover and grill the chicken for another 10 minutes at 200 degrees Celsius.
Then once again flip the skin side up and continue to grill the chicken for the third time at 200 degrees Celsius for 20 minutes to ensure the chicken is fully cooked.
Note:
- You should preheat the air fryer before putting the chicken in to grill.
- Since the air fryer only has heat from the top, flip the chicken meat side up to grill first.
