How to choose fresh and delicious shrimp

  • You should choose shrimp with a translucent shell; when you smell them, you should detect a sea scent, not a fishy smell.
  • Fresh shrimp usually have their tails curled together; if the tails are spread out, it could mean the shrimp have been injected with chemicals or water to make them look plump, and you should avoid buying those kinds of shrimp.
  • Additionally, you can consider another factor: fresh shrimp typically have their legs tightly attached to their bodies; if you touch them and feel that the head is soft and slightly slimy, then you should not buy them.

How to make Fresh Shrimp Cabbage Soup

  • Prepare the shrimp

    To remove the fishy smell of the shrimp, soak the shrimp in a mixture of sugar and alcohol for about 2 – 3 minutes. Then take them out and rinse with water.

    To clean the shrimp, use your hands to separate the head from the body, then gently use a toothpick to thread into the back and carefully pull out the black vein. Do the same for all the shrimp.

    Easy way to remove the black vein from shrimp:
    • Step 1: Use your hands to separate the head from the body of the shrimp, peeling off the shell on the body.
    • Step 2: Then, use a knife to cut into the back of the shrimp, making a vertical cut along the back.
    • Step 3: Gently cut the body of the shrimp in half vertically and carefully use the knife to pull out the black vein.

  • Prepare the cabbage

    Use a knife to cut off the core of the cabbage, then slice it into thin strips vertically.

    Next, prepare a bowl of diluted saltwater, soak the cabbage for about 5 minutes, rinse the cabbage several times with water until clean, then take it out into a colander to drain.

    Tip: Cabbage often has a lot of pesticides, so it needs to be thoroughly cleaned to ensure safety.

  • Cook the soup

    Put a pot on the stove, add 1 tablespoon of cooking oil. Wait for the oil to heat up, add all the chopped shallots and stir continuously until the shallots gradually turn golden brown and fragrant, then add the shrimp.

    Continue to stir until the shrimp gradually turns light orange and firms up, then add about 500ml of water and cook for about 5 minutes.

    Tip: Sautéing the shrimp first will help the shrimp firm up and absorb the seasoning better.

    After 5 minutes, when the soup is boiling, add 1 tablespoon of fish sauce and 2 teaspoons of seasoning powder. Then, add all the cabbage and cook for another 3 minutes. Add 1 teaspoon of monosodium glutamate and mix well to ensure the seasoning is completely dissolved.

    Once the soup is cooked, adjust the seasoning to your family’s taste and turn off the stove. Then, add all the chopped green onions to make the soup more fragrant and visually appealing.

  • At the same time, you can check by gently shaking them; if you don’t hear any sound when shaking, then it’s a fresh egg that you should buy. Conversely, if the egg makes a noise, it is old, and the louder the sound, the older the egg.
