Prepare the Broth
Clean the pork tail bones, place them in a clean basin, add about 1 teaspoon of salt. Then pour boiling water over them, blanch for 2 – 3 minutes to clean the bones, removing any blood or odors. After that, rinse thoroughly with water and let drain.
Place a pot on the stove, add the pork tail bones along with 2 – 3 liters of water and 1 tablespoon of salt, add 70g of chopped large celery, 1 shallot, and simmer on low heat for 1 hour. Skim off any foam when the water boils.
Wash 20g of dried shrimp, then soak in warm water for about 10 minutes to soften the shrimp.
Heat a pan with 1 tablespoon of cooking oil, add 10g of scallions and the shrimp, sauté until the shrimp becomes translucent, then add the dried shrimp and sautéed shallots into the pot of broth, cooking the broth for an additional 20 minutes with half a tablespoon of seasoning.

Preparation of Seafood
Preparing shrimp:
You should soak the shrimp in a bit of salt, then rinse clean and cut off the shrimp’s head.
Next, peel the shell and use a knife to make a slit along the back or use a toothpick to remove the dark vein on the shrimp’s back. Finally, rinse the shrimp once more to ensure it is clean before cooking.
Preparing squid:
Cut across the body and remove any internal organs still attached inside the squid. Use a knife to gently cut a line on the outside near the head of the squid to peel off the skin. Finally, wash it thoroughly with white wine, ginger, vinegar, or lemon to completely eliminate the fishy smell.
Use a knife to make crosshatch cuts on the body of the squid (not too deep) to ensure the squid cooks quickly and looks more appealing.
Continue placing the cut squid into a bowl and add 1 teaspoon of sugar, then massage until the squid releases foam. After that, rinse the squid with water and let it drain.

Wash the carrots and peel them, then add them to the pot of broth. Chop the cilantro finely.
Heat a pan, add squid, shrimp, and green onions, and stir-fry until the shrimp are cooked, then let cool and peel the shrimp.
Slice the chili and garlic thinly. Then place the chili and garlic in a small bowl with 1 tablespoon of sugar, 1/4 teaspoon of salt, and 1 tablespoon of vinegar, and soak for 60 minutes.
Add sliced shallots and minced garlic to fry until crispy and fragrant, reserving the oil for mixing the noodles.
For the char siu, you can buy it from outside, or make it at home. Then slice it thinly.

Blanching Noodles
Boil a pot of water, to prevent the noodles from sticking together, use half a kilogram of noodles for every 4 liters of water.
When the water is boiling, add the noodles and blanch for about 2 – 3 minutes depending on the type of noodles (refer to the instructions on the package for the specific type).
Tips for delicious noodles that won’t be mushy:
- When the water is boiling, reduce the heat to medium or low and blanch the noodles until almost cooked; do not overcook them as they will become mushy and not tasty.
- During the blanching process, you should add a little salt to the water to enhance the flavor of the noodles.
- After the noodles are cooked, drain them in a colander, then add a few drops of olive oil or cooking oil to prevent them from sticking together.

Place the noodles in a bowl and mix with a bit of fried garlic oil and fried onions.
