How to choose fresh and delicious shrimp

  • You should choose shrimp that have a transparent outer shell, and when smelled, it should have a sea smell rather than a fishy one.
  • Fresh shrimp usually have their tails curled together; if the tails are spread out, it may indicate that the shrimp have been injected with chemicals or water to make them appear plump, and you should avoid purchasing these types of shrimp.
  • Additionally, you can consider another factor: fresh shrimp typically have their legs tightly attached to the body; if you touch them and feel that the shrimp head is soft and slightly slimy, it is best not to buy them.

How to make Fresh Shrimp Cabbage Soup

  • Prepare the shrimp

    To eliminate the fishy smell of the shrimp, soak the shrimp in a mixture of sugar and alcohol for about 2 – 3 minutes. Then remove and rinse thoroughly with water.

    To clean the shrimp, use your hands to detach the shrimp head, then gently insert a toothpick into the back and carefully pull out the black vein. Do this for all the shrimp.

    How to easily remove the black vein from shrimp:
    • Step 1: Use your hands to separate the head and body of the shrimp, peeling off the shell on the shrimp body.
    • Step 2: Then, use a knife to insert it into the back of the shrimp, cutting a line along the back.
    • Step 3: Gently cut the shrimp body in half lengthwise and carefully pull out the black vein with the knife.

  • Prepare the cabbage

    Use a knife to cut off the core of the cabbage, then slice it into thin strips lengthwise.

    Next, prepare a bowl of diluted salt water, soak the cabbage for about 5 minutes, rinse the cabbage several times with clean water, then drain in a colander.

    Note: Cabbage often contains many pesticides, so it needs to be cleaned thoroughly for safety.

  • Cooking soup

    Place a pot on the stove, add 1 tablespoon of cooking oil. Wait for the oil to heat up, then add all the minced shallots and stir-fry until the shallots turn golden brown and fragrant, then add the shrimp.

    Continue to stir until the shrimp turns light orange and firm, then add about 500ml of water and cook for about 5 minutes.

    Tip: Stir-frying the shrimp first will help the shrimp become firmer and absorb the seasoning better.

    After 5 minutes, when the soup is boiling, season with 1 tablespoon of fish sauce and 2 teaspoons of seasoning powder. Then, add all the cabbage and cook for an additional 3 minutes. Add 1 teaspoon of monosodium glutamate and mix well to ensure the seasoning dissolves completely.

    After the soup is cooked, taste it again to adjust to your family’s preference and turn off the heat. Then, add all the chopped green onions to make the soup more fragrant and visually appealing.

  • Additionally, you can check by gently shaking them; if you don’t hear any noise when shaking, that means the eggs are fresh and you should buy them. Conversely, if the eggs make a noise, they are old, and the louder the noise, the older the eggs are.
  • Moreover, you can also check by holding them up to a light; if you see small spots and a round yolk, then this egg is fresh and you should buy it.

After about 5 minutes when the water has boiled, slowly pour in the eggs, stirring as you pour so that the eggs dissolve gradually and do not clump together. Next, add all the cabbage and stir well.

    Add another tablespoon of fish sauce, wait for the soup to boil once more, taste and adjust seasoning to suit your family’s palate, and turn off the stove.
