How to Prepare Thanh Hoa Shrimp Cake

Preparing Ingredients
When preparing shrimp, soak the shrimp in diluted salt water for about 3 – 5 minutes, then rinse thoroughly and let it drain. Next, proceed to peel the shrimp and remove the heads, then eliminate the shrimp veins.
When you buy pork belly, rub salt thoroughly on the meat and rinse with water several times, then let it drain. Use a knife to cut the pork belly into bite-sized pieces.
Tip: To quickly remove the shrimp vein, you can count backward from the tail of the shrimp to the second groove connecting the two segments of the shrimp shell, use a toothpick to pierce the shrimp at that groove and pull the shrimp vein out.Peel the green papaya and carrot, then slice them thinly to make the dipping sauce.

Grinding Gac Fruit
Put the deseeded gac fruit into a bowl with 30ml of white wine and soak for 10 minutes. Then, place the mixture in a blender and blend until smooth.

Stir-fry shrimp and meat
Place a pan on the stove, add 2 tablespoons of cooking oil, and wait for the oil to heat up, then add 1 teaspoon of minced shallots and sauté until fragrant.
Add 200gr of pork belly to the pan and stir until the meat turns opaque white, then add 200gr of pre-processed shrimp and continue to stir until the shrimp turns light pink, then turn off the heat.
Next, add 1 tablespoon of sugar, 1 tablespoon of seasoning powder, 1 tablespoon of fish sauce, and 1 teaspoon of black pepper along with the previously ground gấc meat.
Stir-fry the mixture again for 5 minutes, then turn off the heat and let it cool.

Blend ingredients
Add the previously prepared mixture into the blender and blend until smooth.

Rolling the spring rolls
When you buy the rice paper, cut it into rectangular pieces measuring about 7x4cm.
Add the filling that has been finely ground into the rice paper (about 1 tablespoon of filling for each roll) and then roll it tightly.
Tip: You should add a moderate amount of filling to the rice paper to prevent it from falling out while grilling. -
Grilling the spring rolls
Place the rolled spring rolls onto a bamboo grill to grill more at once.
Put the shrimp cake grill on the charcoal stove until the shrimp cake turns golden brown, and during the grilling process, turn both sides evenly for the shrimp cake to cook thoroughly.

Make the dipping sauce
For the dipping sauce, use 50g of papaya and 50g of thinly sliced carrots, soak them in saltwater for 5 minutes to make them crispy. Remove the papaya and carrots to a bowl, then add 1 tablespoon of sugar and 1 tablespoon of vinegar to soak and absorb the flavors.
In another bowl, add 2 tablespoons of sugar, 100ml of filtered water, 1 tablespoon of vinegar, 1 tablespoon of fish sauce, 1/3 teaspoon of minced garlic, and 1/3 teaspoon of sliced chili, then stir until dissolved. After that, pour this mixture into the bowl with the papaya and carrots to have a delicious dipping sauce.
