How to Buy Fresh Chicken
- Select chickens that have a pink-red color, with skin that is not bruised or darkened. Do not choose chickens that are dark because they are those that died before being processed.
- When buying native chickens, choose those with a slender body, light yellow skin, thin, smooth, and high elasticity, with deep yellow only in certain areas like the breast, wings, and back.
- Use your hand to press on the (thigh, breast) to check if the chicken has been injected with water. If the chicken is mushy, slippery, or deformed, do not buy it.
- When buying frozen chicken, it is necessary to purchase from supermarkets or reputable stores to ensure quality.
How to make Beer Steamed Chicken

Prepare the chicken
Buy pre-cleaned chicken from the market. To eliminate the odor of the chicken, sprinkle a little salt and white wine over the chicken and rub for about 10 minutes, then rinse thoroughly with water several times.
How to reduce the chicken’s odor:- Mix vinegar and salt in the ratio: 2 parts salt to 1 part vinegar, then rub it all over the chicken, rubbing several times and rinse thoroughly with water several times.
- Rub lemon and salt on the chicken skin or use a little ginger and white wine to rub on the chicken to effectively eliminate the odor.

Prepare the steaming pot
Prepare a pot for steaming, take 4 stalks of lemongrass, separating the leaves and stems. Place the stems of lemongrass cut in half at the bottom of the pot along with the lemongrass leaves.
Add 1 whole chili and 1 sliced chili in as well.

Marinate the chicken
Take 1 stalk of lemongrass, crush it, 1 chili, and 1 shallot to stuff into the chicken’s belly, then use the chicken’s legs to hold the ingredients inside.
Add 1 teaspoon of pepper, 1/3 tablespoon of seasoning, and 1/3 tablespoon of sugar to a plate, mix well and rub evenly over the chicken, marinate for 15 minutes.

Steamed Chicken
Place the marinated chicken into the prepared steamer, add the whole chili and sliced chili on top of the chicken, then pour 330ml of beer into the steamer and steam over medium heat for 20 – 25 minutes.
After that, use chopsticks to poke the thigh or breast to check if the meat is cooked. If you see that the chicken no longer has red blood, the dish is ready.
