How to choose fresh and delicious chicken
- Choose chickens that are pink, with skin that does not have bruises or purple spots. Avoid buying those with dark skin as they are chickens that died before being slaughtered.
- When buying local chickens, choose those with a slender body, light yellow skin, thin, smooth, and high elasticity, with deep yellow only in certain areas like the breast, wings, and back.
- Use your hand to press on the parts (thigh, breast) to check if the chicken has been injected with water. If the chicken feels mushy, slippery, or deformed, do not buy it.
- When buying frozen chicken, choose from supermarkets or reputable stores to ensure product quality.

Prepare the chicken
Buy pre-cleaned chicken from the market and wash it thoroughly several times, then drain.
How to prepare chicken to reduce odor:- Remove the oil gland, fat, and wash away any remaining blood inside the chicken.
- Use crushed ginger to rub around the chicken for about 10 minutes, then wash it thoroughly with water again.

Make the marinade sauce
Prepare a bowl, add 50g of minced shallots, 50g of minced garlic, 50g of minced green onion stalks, 2 teaspoons of seasoning powder, 2 teaspoons of sesame oil, 50ml of cooking oil, 4 teaspoons of soy sauce, 4 teaspoons of honey, 2 teaspoons of oyster sauce, 100g of char siu sauce, mix well then blend until smooth using the blender.

Marinate and Grill the Chicken
Use a toothpick or sharp skewer to poke evenly into the chicken meat so that when marinating, the spices will penetrate deeply and quickly inside.
Drizzle the sauce over and spread it evenly all over the chicken, marinate for 20 minutes.
