How to choose good chicken thighs
- Choose chicken thighs with light yellow, smooth skin that feels firm to the touch, and press lightly on the meat to feel its elasticity.
- Choose chicken thighs that have a pinkish-red color, without any foul smell or sliminess.
- Avoid those with loose skin and meat.
- Avoid those that are dark, bruised, or have blood spots.
How to choose good cabbage
- Choose cabbages that are round and evenly shaped, with a slightly dark green color.
- Avoid buying cabbages that are flat or elongated, as they are often loose and not firm. Limit purchasing those that have a lot of white, as these are typically cabbages with high fiber content that do not taste good when eaten.
How to cook Korean spicy chicken

Make stir-fry sauce
Add 3 tablespoons of chili powder, 3 tablespoons of Korean chili paste, 1 teaspoon of pepper, 1 teaspoon of minced garlic, 1/2 teaspoon of minced ginger, 1 tablespoon of soy sauce, 80ml of honey, and 3 tablespoons of sesame oil into a large bowl and mix the ingredients well.

Prepare and marinate the chicken
Rinse the chicken thighs in water and then soak them in a diluted saltwater solution for 10 – 15 minutes. After that, rinse the meat with clean water 2 – 3 times and let it drain.
When the chicken thighs are drained, remove the bones and skin, then add the stir-fry sauce to the meat, mix well, and marinate for 15 minutes.

Prepare other ingredients
Sliced cabbage, soak in diluted salt water for 10 minutes, then rinse with water and drain.
Wash and slice the spring onion.

Cut and fry rice cakes
Cut the rice cakes into pieces about the length of a finger.
Then, add 1 tablespoon of cooking oil to the pan, when the oil is hot, add the rice cakes and fry on low heat until the outside is golden and crispy. To prevent burning, be sure to stir the cakes evenly.

Add the chicken to the pot with 150ml of water, then cook the chicken on high heat for 7 minutes to sear it.
