Grouper 600 gr Fresh coconut water 300 ml Green onions 3 stalks Green chili 3 pieces Cooking oil 2 tablespoons Fish sauce 3 tablespoons Coloring sauce 2 tablespoons Common spices a little (salt/ sugar/ monosodium glutamate/ pepper)

How to Cook Clay Pot Grouper

  • Prepare the Grouper

    When you buy grouper, rinse it with water. Then, use 2 tablespoons of salt to rub it on the fish, then scale and clean the fish.

    After cleaning, cut the fish into bite-sized pieces.

  • Marinate the fish

    Chop 2 stalks of green onion and 2 green chilies, then put them in a bowl. Add 3 tablespoons of fish sauce, 1 teaspoon of monosodium glutamate, 1 tablespoon of sugar, and 2 tablespoons of coloring sauce. Use chopsticks to mix well until the mixture is dissolved.

    Add the grouper fish, then add 1 teaspoon of pepper and 2 tablespoons of cooking oil, stir well to let the fish absorb the seasoning.

    To make the braised fish delicious, marinate the fish for 45 – 60 minutes before cooking.

  • Cook the fish

    Place a pot on the stove and add all the fish along with the marinade into the pot. Cook the fish on low heat for about 5 minutes, when the pot starts to boil, add 300 ml of fresh coconut water.

    Then, continue to cook the fish for about 10 more minutes, until the sauce thickens. Turn off the heat, chop 1 stalk of green onion and the remaining green chili, then sprinkle on top of the fish. The braised fish is now complete!

    The pot of braised grouper is hot, fragrant with the scent of pepper and onion. The fish is fatty and tender, evenly soaked with seasoning. The braising sauce is rich, with a light sweetness from the coconut water. With this dish, serving it with hot white rice is simply perfect, guaranteed to make you eat more!

How to Cook Braised Grouper with Pepper

  • Prepare the Grouper

    Wash the grouper with water. Next, prepare a basin of warm water, squeeze the juice of 1 lemon into it, then soak the fish for about 5 – 7 minutes, and rinse with water.

    After cleaning, cut the fish into bite-sized pieces.

  • Marinate the Fish

    Put the fish in a bowl, add 3 tablespoons of fish sauce and 2 teaspoons of pepper, then stir well for the fish to absorb the seasoning. Marinate the fish for about 25 – 30 minutes to enhance the flavor when braising.

  • Stew the fish

    Place a pan on the stove, wait for it to heat up, then add 2 tablespoons of sugar to the pan. When the sugar starts to melt, reduce the heat, then add 1 tablespoon of cooking oil along with 2 teaspoons of minced garlic.

    Stir continuously to prevent the sugar from burning, then add the fish to stew. Add about 300ml of water to the pot, then stew the fish on low heat for about 10 – 15 minutes. Finally, season the dish to taste and then turn off the heat.

How to clean grouper properly, without fishy smell

During the cleaning process, you can use familiar, easily accessible ingredients to keep the fish clean and odor-free.

  • Rice water: After cleaning the fish, cut it into bite-sized pieces and soak it in rice water for about 15 – 20 minutes. Then, rinse it under clean water.
  • Salt: Dissolve a little salt in water and soak the fish for about 5 – 10 minutes. Alternatively, you can rub salt on the fish’s body, then scale it and proceed to clean it.
  • Alcohol or vinegar: When washing the fish, you can mix a few tablespoons of alcohol or white vinegar into the water, then soak the fish for about 5 minutes and rinse it well with water.
  • Ginger: After buying ginger, crush it and slice it. Then, soak it in water with the fish for about 5 minutes.
  • Unsweetened fresh milk: After cleaning, soak the fish in fresh milk for a few minutes before cooking.
  • Lemon: Squeeze lemon juice into warm water, then soak the fish for about 5 – 7 minutes, and rinse well with water.
