Ingredients for Vegetarian Crab Claw Salad Serves 3
Crab claw greens 1 kg Vegetarian spare ribs 100 g Lime 2 pieces
Seasonings: monosodium glutamate, salt, sugar, chili sauce, vinegar

How to choose good crab claw greens:
- Choose greens that look young, juicy, fresh, and not wilted. Look for greens that are fresh, with taut and shiny leaves that are light green. Dark green leaves mean the greens are old and not tasty.
- Younger greens with fewer flowers will be crunchier and tastier than older greens with many flowers.
- You should choose younger crab claw greens for the salad as they will be tastier. Younger greens will retain their crunchiness and have a better aroma.
How to make Vegetarian Water Lily Salad

Prepare the ingredients
Wash the water lily thoroughly with diluted lemon water or vegetable wash.
Break the long stalks in half for easier eating.
Soak the rib pieces in cold water for about 30 – 40 minutes to soften. Squeeze out the water thoroughly, then rinse with water about 5 – 6 times and squeeze the ribs to remove excess foam.
Squeeze the ribs to remove all moisture, then tear into small pieces and place in a bowl. Season with: 1/2 teaspoon of monosodium glutamate, 2 teaspoons of salt, and mix well to absorb.
Tip: Do not wash with salted water as it can bruise the vegetables and make them taste bad. When washing, be gentle to avoid bruising the vegetables.

Make the dressing
In a bowl, add 1.5 teaspoons of sugar, 3 tablespoons of vinegar, stir well until dissolved, then add about 1 teaspoon of salt, stir well until dissolved.
Add 1 teaspoon of chili sauce, mix well. Adjust seasoning to taste and add chopped chili if desired.

Fry the rib pieces
Heat a pan on the stove, add about 200ml of cooking oil, and heat over medium heat until the oil is bubbling, then add the vegetarian ribs and fry until golden and crispy, then remove.
Remove and let drain. Let it cool a bit before adding to the salad.

Mixing the salad
Put the picked greens on a plate, add the mixed dressing, gently massage to ensure the salad is evenly coated. Finally, add the fried spare ribs on top, and the dish is complete.
