How to choose fresh pork belly
- Fresh pork belly will have a bright color, with a clear distinction between fat and meat. The pork belly should be bright pink or light red, with the fat layer in the middle being bright white, not cloudy or yellowed.
- When you touch the meat, it should feel firm, the meat should stick tightly to the fat without separating, it should be elastic, and the surface should be dry without any slimy fluid; if so, it can be selected.
- Choose pork belly pieces with a balanced ratio of fat and lean meat, which helps the braised dish be delicious without being greasy.
- Do not choose pieces of meat with strange smells, foul odors, or slimy when touched; these are spoiled and cannot be used.
