How to choose fresh and delicious shrimp
- First, for this dish, you should choose either sea shrimp or river shrimp. Sea shrimp are small but have a rich sweetness that enhances the flavor of the shrimp dish.
- Next, you need to pay attention to the tail of the shrimp when buying. If the shrimp has a curled tail, feels soft and mushy when held, and has a pale white color, these are likely river shrimp that are spoiled and may have been soaked in chemicals.
- Fresh, natural river shrimp will have a curled tail; however, if they are injected with chemicals, the tails will spread out.
- Another tip to identify shrimp that have been injected with chemicals is that the back of the shrimp is often abnormally swollen, causing the segments on the back of the river shrimp to stretch out, making the shrimp body straight and stiff. The head shell of the shrimp is easily separated from the body.
- To buy fresh shrimp, you should purchase live shrimp or look for shrimp with clear, shiny shells and flesh. The shrimp should have a characteristic fresh smell, without any rotten or overly fishy odor.

Prepare the shrimp
You wash the shrimp thoroughly with water, then place the shrimp in a bowl with 1 tablespoon of salt and 3 tablespoons of vinegar, using your hands to gently massage for about 5 minutes, then rinse with water and let it drain.

Prepare the other ingredients
Green onions should have their roots trimmed, washed thoroughly with water, and then chopped finely. Garlic should be peeled, washed, and then minced. 2 chili peppers should be washed, deseeded, and then minced.
Lettuce, Vietnamese balm, and basil should have the leaves picked off the stems. Wash thoroughly with diluted salt water once, then rinse with water two more times, and let the vegetables drain.

Sauté shrimp
Place a pan on the stove, add a little oil to the pan. When the oil is hot, add 1/3 of the minced garlic to the pan and sauté until fragrant and golden. Then add the shrimp and stir on high heat. High heat will help the shrimp turn a beautiful red color and prevents them from releasing too much water during cooking.
When the shrimp turns a beautiful red, add 1 tablespoon of sugar and stir the shrimp with chopsticks over high heat. After about 1 minute when the shrimp absorbs the sugar, add 1 tablespoon of fish sauce to the shrimp, stir well for about 2 more minutes, then turn off the heat.
Add chopped green onions, 1/3 teaspoon of monosodium glutamate, and a little ground pepper to the pan. Stir the shrimp evenly.

Make fish sauce
In a bowl, add 2 tablespoons of sugar (not heaping), 2 tablespoons of fish sauce, and 4 tablespoons of filtered water. Stir well until the mixture is completely dissolved.
Add 2 tablespoons of lime juice along with the remaining minced chili and garlic to the bowl. Stir well to finish the dipping fish sauce.
