How to choose fresh ingredients
How to choose fresh, delicious tomatoes
- You should select tomatoes that have a shiny skin, bright red, and even color because these are usually ripe and juicy.
- Those with green stems still attached to the top of the fruit are often freshly picked, making them sweeter and crunchier.
- Avoid choosing those with wrinkled skin or those that feel soft and mushy when pressed lightly, as they are either overripe or have been harvested for a long time.
How to choose delicious, quality carrots
- Fresh, delicious carrots will have a characteristic deep orange color, bright color, smooth skin, not cracked, firm, and feel solid in hand.
- It is advisable to choose carrots with fresh green tops, not bruised or wilted.
- You should choose long, slender carrots of moderate size, not too large or too small.
- Do not buy carrots with rotten tops and bent bodies, or those with damaged or scratched skin, as these are old carrots and no longer fresh.
How to choose safe, non-toxic potatoes
- You should choose potatoes with yellow skin as they tend to be sweeter and tastier than white-skinned potatoes.
- Good potatoes have smooth, shiny skin, feel heavy in hand, and are of moderate size.
- To save time peeling, choose potatoes with a plump surface, not too many dents.
- Absolutely do not buy sprouted potatoes as they can cause poisoning when eaten.
- Potatoes with wrinkled, dried skin that feel light in hand should also not be purchased as they are typically old potatoes that have been stored for a long time.

Prepare the ingredients
After purchasing, wash the potatoes and carrots with water to remove all dirt, peel them, rinse again with clean water, and let them drain.
Next, cut the potatoes and carrots into small dice. Since carrots take longer to cook, cut the carrots thinner and smaller than the potatoes.
Wash 2 tomatoes thoroughly, then chop them finely.
Tip: To make the stir-fried pasta with vegetables more appealing, you can also prepare peas, bell peppers, onions,… to cook along as well! -
Boil Pasta
Place a pot on the stove, add about 700ml of water along with 1 tablespoon of cooking oil and 1 teaspoon of salt.
When the water starts to boil, add all 120g of pasta, reduce to medium heat, and when the pasta touches the water and has softened, use your hands to press all the strands of pasta down into the water.
Stir the pasta evenly and cook for about 10 minutes, then turn off the heat and let it rest for about 3 minutes. After that, scoop the boiled pasta out into a colander to drain, and it’s done.
Tips for boiling pasta perfectly:- To make the pasta fluffier and tastier, add oil and salt to the boiling water.
- To check if the pasta is cooked, take out a strand, break it in half; if the inside still has a lot of cloudy white, it means the pasta is not cooked.
- For better tasting pasta after cooking, ensure that there is about 1 toothpick’s length of cloudy white left inside the strand of pasta.
