Raw cashew nuts 200 gr Coarse salt 400 gr

  • You should choose coarse salt to roast the cashew nuts, as this salt will be less salty than iodized or regular salt.
  • The ratio of cashew nuts to salt is 1:2.

How to make Salted Roasted Cashew Nuts

  • Roasting with salt

    Place a pan on the stove over high heat, wait for the pan to heat up before adding 400gr of coarse salt. Use a spoon to stir until the salt feels really dry.

    Note:

    • Roast the salt until completely dry so that the salt has enough temperature to cook the cashew nuts evenly and does not stick to the cashew nuts when eating.
    • Choose a flat-bottomed pan for roasting as it will help the cashew nuts cook more evenly compared to a curved-bottom pan.

    After the salt is roasted dry, adjust the heat to medium and start adding 200g of cashews to the pan, stirring evenly until the cashews turn golden brown.

How to Make Roasted Cashew Nuts with Garlic and Chili

  • Roast the cashew nuts

    Place the raw cashew nuts on a baking tray lined with parchment paper, spread them evenly, and then put them in the oven at 180 degrees Celsius for 15 – 18 minutes.

    Tip: You can choose to buy pre-roasted cashew nuts to save time.

  • Grind garlic and chili

    First, peel the garlic and put it into the blender, then press the button to grind it slightly.

    Next, use a knife to cut the chili peppers in half to remove the seeds, then cut them into pieces, and put them into the blender to grind them finely like the garlic.

    Tip:

    • Grind the garlic and chili without making it too fine.
    • You can chop the garlic and chili instead of grinding them.
    • Depending on your preference for spiciness, you can adjust the amount of chili peppers used, as it doesn’t have to follow the recipe exactly!

    Place the pan on the stove, heat over medium heat, add 150g of granulated sugar, 50g of water, and 15g of salt, and shake the pan gently instead of stirring with a spoon.

    Cook the sugar until it thickens, then add the ground chili and mix well.

    Continue to add the roasted cashews into the pan, mixing the mixture for about 2 – 3 minutes after seeing the sugar coating around the cashews. Turn off the heat.

    Transfer all the cashews that have just been coated with sugar onto a baking tray lined with parchment paper, spread them out evenly, and continue to bake for the second time at a temperature of 150 degrees Celsius for about 5 – 7 minutes.

    Then, open the oven door, stir the cashews, and bake for an additional 5 minutes.

    Take the tray of roasted cashews out of the oven, add all the fried garlic, mix well, and spread the cashews on the tray.

    Finally, roast for an additional 2 minutes at 150 degrees Celsius.
