- When buying dried squid, you should choose those with a white belly, pink back, and faint black spots on the squid’s skin.
- Additionally, good dried squid should have a light sea scent, not fishy, with the tentacles firmly attached to the body and a pinkish-white color. When touched, the squid should feel slightly moist, not too dry.
- Avoid buying dried squid that shows signs of mold, has an unusual odor, or has turned yellow as this indicates it is old and spoiled, and should not be purchased.

How to prepare Bình Định squid

Grilling dried squid
Place the dried squid on the grill, then clamp the grill tightly, put it on the fire, and grill over red-hot coals for about 1 minute on each side until the squid is slightly firm and fragrant, then stop and turn off the coals.
Tip: If the dried squid you bought is large, after grilling, you should use scissors to cut it into small pieces that are about 1.5 finger lengths in width and length! -
Making the sauce
Place a pan on the stove, add 1 tablespoon of cooking oil, and heat over medium heat until the oil is hot. Then add 2 cloves of minced garlic, stir-fry for about 2 minutes until the garlic turns slightly golden and fragrant, then add 200g of ketchup.
Stir well, then add 100g of chili sauce, mix well until the ingredients are combined and start to boil, then add 500g of sugar, and continuously stir with a ladle over low heat for about 4 minutes until the sugar dissolves completely and simmers.
Next, add 1 tablespoon of malt syrup, let it sit in the pan for about 2 minutes until the malt syrup separates from the ladle, then stir well for about 6 minutes until the malt syrup dissolves, boils, and thickens to the right consistency, then stop.
Tip:- To prevent the sauce from burning and sticking to the pot, when adding sugar, you should stir continuously until the sugar is completely dissolved!
- To check if the sauce is cooked properly, you can add a little of the cooked sugar from the sauce pan into a bowl of water. If the syrup turns a reddish-yellow and does not dissolve, then you can add the malt syrup!
