- Choose fresh enoki mushrooms that are white, crunchy, and shiny, with firm caps, and stems that are not slimy or slightly brown.
- It is advisable to choose mushrooms that are still fresh, not bruised, with the stems intact and not falling apart, and without any slime present.
- When buying pre-packaged mushrooms at store systems, supermarkets, or large markets, you should carefully check the origin to avoid buying low-quality mushrooms that are past their expiration date.
How to make Beef Tofu Mushroom Seaweed Soup

Prepare the ingredients
Soak the seaweed in water for 20 minutes until it softens, then rinse it with water to clean and let it drain.
Use a knife to cut off the roots of the enoki mushrooms, then cut them in half and separate them into small strands. Next, soak all the mushrooms in diluted salt water for 4 – 5 minutes, then rinse them with water 2 – 3 times and squeeze dry, letting them drain.

Prepare the beef
Wash the beef briefly with water, then rub a sufficient amount of salt onto the beef piece, let it sit for 5 minutes, then rinse it with water until it’s completely clean and let it drain.
Then use a knife to slice the beef into thin pieces for easy eating.

- Method 1: After washing the beef with water, rinse it again with alcohol or soak the meat in alcohol for about 15 minutes to effectively reduce the odor, and also make the meat softer and tastier when cooked.

Marinate the meat and cook the soup
The beef is placed in a bowl and marinated with 1 part minced garlic, 2 teaspoons of soy sauce, and 1 teaspoon of pepper, then mixed well to allow the meat to absorb the seasoning.
Place a pot on the stove, add 2 tablespoons of cooking oil. Wait for the oil to heat, then add the remaining garlic to sauté until fragrant. Next, add the marinated beef and stir-fry until the meat is seared, then add 2 bowls of water and cook for about 5 minutes over medium heat.
Next, add the enoki mushrooms to the pot and cook for about 5 minutes, then add the seaweed and cook for another 10 minutes. Season the pot with 3 teaspoons of soy sauce, 2 teaspoons of seasoning powder, and 1 teaspoon of sugar, then stir briefly to dissolve the seasoning.
After that, cut the soft tofu into small pieces and add it to the soup pot, bringing the water to a boil once more. Finally, taste and adjust the seasoning as needed, then turn off the heat.
