Tips for selecting good cabbage (both purple and white cabbage):
- Choose heavy cabbage heads with tightly packed leaves.
- Good cabbage has a tight head, thick top, closed leaves, and a small stem.
- Avoid buying cabbage with yellow leaves, a spoiled smell, or split cores, loose leaves, or many bruises. Also, avoid cabbage heads with brown stems or brown spots on the surface.
- Cabbage should be dark purple, with fresh and crisp leaves.
How to Prepare Vegetarian Purple Cabbage Salad

Prepare the Ingredients
After buying purple cabbage, remove any wilted or damaged leaves, then soak it in diluted salt water for about 5 – 10 minutes to clean, rinse thoroughly with cold water, and drain. Cut or shred the purple cabbage thinly.
Wash the carrot and ginger, peel them, and cut them into small strips. Remove the ends and roots of the bean sprouts, then wash and drain. Remove the seeds from the chili and cut it into small strips.
Tip to Retain the Color of Cabbage: Let the cabbage drain before cutting it small. Once you have cut the cabbage, avoid letting it come into contact with water again.

Prepare the Dressing
In a bowl, add 1 teaspoon of seasoning powder, 2 tablespoons of sugar, 1 tablespoon of fish sauce, 1 tablespoon of lime juice, and 1 tablespoon of chili sauce, then mix well until the mixture is dissolved.

Mix the Salad
In a bowl, add the shredded carrot, ginger, bean sprouts, finely chopped purple cabbage, and sliced chili, then add the prepared dressing from above and gently mix so that the ingredients absorb the seasoning evenly.
Small Tip: After cutting the carrot into strips, you can soak it in a bowl of cold water for about 15 minutes to make the vegetables crispier and tastier when prepared. Then, drain it well.
