How to Choose Fresh and Delicious Black Beans
- You should choose whole black beans, which have a characteristic fragrant smell; this will ensure the dish is fragrant and delicious after cooking.
- Hold the beans tightly in your hand; if the beans feel hard and firm, they are good black beans, unlike damp beans that may easily break.
- Avoid buying black beans that have a thin layer of white powder on the outside, as these are often moldy beans, which will affect the quality of the dish when cooked.
Information about tapioca starch
- Tapioca starch is made from the starch of cassava roots, rolled into small round balls that are opaque white. When cooked, they become translucent white and have a chewy texture when eaten.
- Usually, tapioca starch is used in various desserts, cakes,… You should soak them for about 30 minutes before cooking to save time.
- You can buy tapioca starch at grocery stores, supermarkets, markets, or on e-commerce websites,… When purchasing, you should check that the pearls are not moldy, slimy, or have unusual colors.

How to prepare Black bean dessert with coconut milk and tapioca pearls

Soak black beans and tapioca pearls
With 180 grams of black beans after purchasing, soak the beans in water for 4 – 6 hours or overnight to soften the black beans, making them easier to prepare, then drain the water completely.
For the remaining 30 grams of tapioca pearls, rinse them clean, then soak them in water for 15 minutes to let the tapioca pearls expand.

Simmer black beans
First, turn on the stove to medium heat, add 2 liters of filtered water to the pressure cooker along with the black beans, then simmer the beans for 15 minutes until you hear the hissing sound from the pot, then lower the heat and continue simmering for another 45 minutes.

Cook the dessert
Use a sieve to remove the beans, place them in another pot along with 280 grams of sugar, gently mix well, then let it marinate for about 15 minutes. After that, turn on the stove to low heat, and stir-fry the beans for 15 minutes.
Next, add 80 grams of tapioca pearls and 5 grams of vanilla sugar, continue to cook for another 10 minutes.
Note: You check by tasting; if you feel the beans are cooked soft and fragrant, then you can add sugar; otherwise, the beans will be tough.
Finally, you add the mixture of 15g of tapioca flour dissolved in 50ml of water to the pot with the beans, allowing it to boil again for about 10 minutes, then adjust the sweetness to taste before turning off the heat.

Making Coconut Milk
Turn on the stove to medium heat, add 260ml of coconut milk, 15 grams of sugar, and 1 gram of salt to the pot, stirring until the mixture boils for about 5 – 7 minutes.
Next, dissolve 7g of tapioca flour in 50ml of clean water, then add it to the coconut milk mixture, continuing to boil for 5 minutes to achieve a thick consistency for the coconut milk.
