- Choose mushrooms that are still fresh, not bruised, with the roots intact and not opened. The mushroom bag should not show any signs of leaking water, indicating good quality mushrooms.
- Avoid choosing mushrooms that have spots on their stems or are yellowing, as these may be contaminated and could affect health.
- Pay attention to the expiration date (if buying mushrooms packed in plastic bags); do not use mushrooms past their expiration as they can cause food poisoning.
- You should also buy mushrooms from reputable sources to ensure health safety.
How to prepare Grilled Enoki Mushroom Rolls

Prepare the ingredients
Soak the vegetarian pork slices in cold water for about 30 minutes to soften, then drain well.
Trim the roots off the enoki mushrooms and gently wash them with cold water. Rinse with vinegar and salt to eliminate any odor.
Wash the lettuce and let it drain. Clean the green onions and chop them into small pieces.

Stir-fried vegetarian meat
Put 2 tablespoons of cooking oil into the pan, turn on medium heat, when the oil is hot, add chopped green onion and sauté until fragrant, then add satay and stir-fry until aromatic.
Next, add the vegetarian pork slices and stir-fry continuously for about 3 – 4 minutes until hot and evenly coated with satay, season with 1.5 teaspoons of sugar, 1 teaspoon of vegetarian seasoning, and 0.5 teaspoon of five-spice powder, 1 teaspoon of barbecue sauce.
Stir well for about 4 minutes and then turn off the heat.

Roll the mushrooms
Take the stir-fried vegetarian pork slice, wrap a little enoki mushroom inside. Then use a toothpick to pierce through horizontally to secure the enoki mushroom roll.
Tip:
When rolling, press the edges tightly and pin them to avoid coming undone while grilling.

Grill the meat
Prepare hot charcoal with a grill or grill using an electric grill or oven, then place the vegetarian meat rolls with enoki mushrooms on the grill over low heat for about 5 minutes, when the mushrooms soften and emit a fragrant aroma, they are done.
Tip:
- When grilling, remember to turn them regularly so the meat doesn’t burn!
