How to choose fresh and delicious green onions
- When buying green onions, you should choose stalks that are dark green, fresh, and upright. The bulbs should be pure white, looking very appetizing.
- Additionally, you should choose stalks with fresh white roots; if there’s a bit of dirt, it’s okay. This proves that the green onions are freshly picked, so they will be fresher and tastier.
- Do not choose green onions that are yellowing because these are old stalks, sometimes even spoiled and inedible.
How to prepare Onion Fish Sauce

Prepare the ingredients
Peeled garlic, chop finely. Remove the stems from the chili, rinse with water, and chop finely.
Remove the roots from the green onions, wash clean, and chop small.

Making scallion oil
Put a pot on the stove, then add about 2 tablespoons of cooking oil and heat it over medium heat for about 1 minute until the oil is hot, then add the chopped scallions.
Sauté continuously for about 1 minute over low heat until the scallions become fragrant, then turn off the heat and transfer to a plate.

Make Fish Sauce
Next, add 200ml of filtered water into the pot where you sautéed the scallion oil. Then cook over medium heat for about 2 minutes until the water in the pot boils, then add 120g of sugar.
Stir well and add 100ml of fish sauce along with 1/2 teaspoon of salt. Stir evenly and cook over low heat for about 5 minutes until all ingredients dissolve and come to a boil.
