Successful Cooking Tips

When grilling fish, you need to grill it until one side is golden and crispy before flipping it to avoid the fish meat cracking.

You can use a oven, electric grill, air fryer, or charcoal grill to grill fish as well.

  • Oven: Bake at 200 degrees Celsius for about 20 minutes
  • Air fryer: Bake at 200 degrees Celsius for 10 minutes, then take it out, flip the fish, and bake for another 10 – 15 minutes until the fish is cooked.
  • Charcoal grill: Grill for about 20 minutes, frequently turning to prevent the fish from burning. Additionally, pay attention to adjust the fire, avoiding too much flare-up.

What is mackerel?

  • Mackerel (scientific name: Trachurus) is a type of fish belonging to the family Carangidae. This type of fish is very popular in Asian countries, especially Japan. In Vietnam, mackerel is considered a specialty of Phu Quoc, Hau Giang, and Kien Giang.
  • Generally, mackerel has an appearance and size similar to sliver fish and bigeye fish. They have a slightly flattened body, shaped like a betel leaf, with shiny scales and a brown-white color.
  • Thanks to its delicious flavor, firm and sweet meat, mackerel is very popular and can be processed into many different attractive dishes such as grilled dishes, fried dishes, soup dishes,…

How to choose good mackerel

  • Fish eyes: Choose fish with bulging, clear eyes; when gently pressed with a finger, they should have good elasticity. However, if the eyes are sunken, with wrinkled corneas and cloudy appearance, do not choose them.
  • Fish gills: Fresh fish gills will have a bright red color and will not be slippery.
  • Fish scales: Good fish will have shiny scales, firmly attached to the body extending to the tail, with no foul smell. Conversely, if you see the scales are not shiny and are peeling, do not buy them.
  • Anal opening: The anal opening of mackerel is located under the belly near the end of the tail. When you see the fish’s belly flat, with a protruding anal opening, looking uniformly white without any color changes like red or pink, then it is fresh fish.
  • Fish mouth: The mouth of fresh fish is always tightly closed, so if you see the fish’s mouth slightly open, it indicates that the fish is spoiled and rotten.
