How to prepare grilled fish with lemongrass and chili

Prepare the ingredients
Purchase the fish, remove the fins, gills, gut it, then rinse the fish briefly with water, soak it in a bowl of diluted salt water for 5 minutes, then rinse thoroughly 2 – 3 times with clean water.
Next, use a sharp knife to fillet the fish, discarding the bones and head.
Wash the lemongrass, cut the leaves into sections, and finely chop the white part. Wash the chili peppers and finely chop them. Trim the roots off the green onions, wash them clean, and chop them finely.
How to clean fish without a fishy smell

Marinate the fish
Place the fish fillet on a plate and marinate it with 1/3 teaspoon of salt, 1 teaspoon of sugar, 1/2 teaspoon of seasoning powder, and 1/3 teaspoon of monosodium glutamate.
Then add minced lemongrass, onion, and chili, mix well, then wear plastic gloves to rub the seasoning mixture evenly on both sides of the fish and let it marinate for 30 minutes for the fish to absorb the flavor.

Grill the fish
To stabilize the temperature of the air fryer, preheat the fryer at 200 degrees Celsius for 5 minutes.
Next, place the cut lemongrass stalks at the bottom, arrange the fish on top, add 1 tablespoon of cooking oil on the surface of the fish, then place the fish tray in the fryer and grill the fish for 10 minutes at 180 degrees Celsius.
After 10 minutes, open the fryer, flip the fish over, and grill for another 10 minutes to finish.
