How to Choose Fresh and Delicious Pork

  • First, you must choose fresh meat. The color of good meat is bright pink, not too red and not too pale.
  • Meat that is pale, has a greenish tint, and smells foul is spoiled, and you should not choose this type of meat.
  • Pork that is firm and has high elasticity is good meat. You can test it by pressing your finger into the meat; if it bounces back immediately, is not slimy, and does not drip water or fluids, then it is good.

How to Prepare Pork Rolls

  • Prepare the Pork

    Wash the pork with coarse salt and then rinse with clean water. After that, blanch briefly with smashed shallots (or ginger), or blanch briefly in boiling water mixed with a little white wine to eliminate the odor.

    Put the meat in a large bowl and add 10g onion powder, 10g garlic powder, 10g seasoning powder, 5g pepper, then mix evenly and marinate for 30 minutes for the spices to penetrate thoroughly.

  • Fry and slice the pork

    After 30 minutes, add 200ml of oil to the pan, when the oil is hot, add the pork and fry until it is tender and evenly golden over medium heat.

    Once fried, remove the pork, let it cool for about 5 minutes, then start slicing the pork into bite-sized pieces.

    Add 45g of sugar, a slice of lemon to 50ml of fish sauce, then stir well. Next, add minced garlic and minced chili and mix the mixture thoroughly.
