Beef 400 gr Vietnamese coriander 50 gr Cherry tomatoes 50 gr Green onions 3 stalks Cilantro 3 stalks Garlic 5 cloves Onion 1/2 bulb Cooking oil 3 tablespoons Fish sauce 1 teaspoon Garlic powder 1 teaspoon Common seasoning A little (seasoning powder/sugar/salt/pepper)

  • To choose good beef, you should observe the color of the meat. Fresh beef usually has a bright red color, not dark red, and the fat is light yellow.
  • You should choose small and tender pieces of meat, with a smooth texture, and when pressed, it has good elasticity.
  • You should not choose pieces of meat with small white cysts that can easily detach, as this may indicate that the meat is infected with parasites.

  • You should choose fresh Vietnamese coriander, with small leaves, a distinctive aroma, not wilted, and without strange smells.
  • Avoid buying Vietnamese coriander with large, shiny leaves as it is less fragrant and not as tasty as the small-leaved variety.

  • Prepare the beef

    To eliminate odors and dirt, after purchasing, massage the beef with a little salt, then rinse it clean with cold water and let it drain.

    Next, use a knife to slice the beef into thin, bite-sized pieces horizontally.

    How to remove the odor from beef

    • Method 1: Soak the beef in white wine for 15 minutes, then rinse it with clean water.
    • Method 2: Place the beef in a pot of water, heat for about 3 – 5 minutes, then take it out and rinse; this will help reduce the odor. Note to heat only to about 50 degrees Celsius and not boil.
    • Method 3: Use lemon or vinegar to rub the beef for 5 – 7 minutes, then rinse with clean water.
    • Method 4: Roast a piece of ginger, then crush it, rub it on the beef, and rinse it clean.

    • When cutting beef, you should slice it thinly and cut against the grain. Properly cutting the beef will help you cook the dish faster and prevent the meat from being tough.
    • You can place the beef in the fridge for 20 – 30 minutes, which helps the meat firm up and makes it easier to cut.

    After preparation, proceed to marinate the beef with 1 teaspoon of seasoning, 1/2 teaspoon of pepper, 1/2 teaspoon of salt, 1 teaspoon of sugar, 1 teaspoon of garlic powder, 1 teaspoon of fish sauce, and 1 tablespoon of cooking oil.

    Mix well and let the beef absorb the seasoning for about 20 – 25 minutes.

  • Stir-fry beef

    Place a pan on the stove, add 2 tablespoons of cooking oil and heat it up, then add minced garlic and sauté until fragrant.

    When the garlic is fragrant, add the beef and stir-fry on high heat for about 3 – 5 minutes until the beef is cooked, then turn off the heat and transfer the beef to a bowl.

    Utilizing the pan used to stir-fry the beef, add the onion, Vietnamese coriander, and tomato and stir-fry on high heat until evenly cooked.

    Place a pot on the stove, add 1.5 liters of water and bring to a boil, then add the onion, tomato, and the stir-fried beef into the pot and continue to cook until the broth boils again. Next, add 1 tablespoon of sugar, 1 teaspoon of seasoning powder, and stir well.

    Finally, add the Vietnamese coriander into the pot, stir well, and then turn off the heat.

    Serve the soup in a bowl, add chopped green onion, chopped Vietnamese coriander, and a little ground pepper on top, then garnish for a beautiful presentation to finish.

    Tip: During cooking, you should frequently skim off the foam to keep the broth clear and visually appealing.
