Anchovies 150 gr Vermicelli 1 kg Rice paper 20 pieces (for wrapping) Crispy frying flour 1 packet (150gr type) Chicken egg 1 piece Kumquat 1 piece Lemon 1/2 piece Chili 1 piece Garlic 4 cloves Lettuce 300 gr Green onion 3 stalks Herbs a little Fish sauce 3 tablespoons Cooking oil 300 ml Common spices a little (salt/sugar/seasoning/pepper)

  • Avoid choosing fish that are murky in color, have cloudy eyes, soft flesh, or a rotten smell.

  • Choose long, thick stems; note that pesticide-free lettuce usually has green outer leaves, with the inner layers gradually turning pale green or white.
  • Choose stems that feel slightly slimy when broken, indicating freshly picked, sweeter lettuce.
  • Fresh vegetables will have smooth leaves, tightly rolled, and a light fragrance, so you should buy them.

  • Prepare the ingredients

    Wash the anchovies several times with water and let them drain.

    Clean the lettuce and herbs, removing any damaged leaves, then rinse with diluted salt water, and wash again with clean water before draining.

    Peel and finely chop the garlic, chop the chili. Finally, wash the green onions and chop them finely.

  • Mix the batter and fry the anchovy mixture

    You put the anchovies into a bowl, add 1 teaspoon of pepper, 2 teaspoons of seasoning, then mix well and marinate the fish for about 15 minutes.

    Next, you crack 1 egg into the bowl with the anchovies along with 150g of crispy batter, mix the mixture well and let it marinate for another 15 minutes.

  • Make the dipping sauce and finish

    You put 3 tablespoons of fish sauce, 2 tablespoons of sugar, 3 tablespoons of water, the juice of 1/2 lime, the juice of 1 calamondin, add all the minced garlic, minced chili, and then stir the dipping sauce well.

    Take 1 piece of rice paper, add lettuce, herbs, vermicelli, and finally the battered fried anchovies, quickly roll it up and enjoy right away.
