How to Choose Fresh and Delicious White Radish

  • You should choose radishes that are straight, elongated, have smooth skin, and are not scratched or bruised.
  • Choose radishes with bright green stems that are firmly attached to the root and still have root hairs, which indicates they are fresh and good quality.
  • Avoid radishes with wilted stems, swollen bodies, and leaves that are no longer fresh.

How to prepare Pickled White Radish in Soy Sauce

  • Prepare the ingredients

    The radish you buy will be peeled, washed thoroughly with water, and cut into bite-sized pieces.

    Then, place the radish in a large basin, add a bowl of coarse salt, mix well, and leave it like that for about 2 hours.

    After about 2 hours, wash the radish with plenty of water to reduce the saltiness, then sun-dry it until the radish wilts.

    Garlic and chili should be sliced and also dried in the sun with the radish.

    Note: The bowl used in this recipe is a rice bowl, and 1 bowl is approximately 200g.

  • Make the pickling solution

    Place a pot on the stove, add 1 bowl of soy sauce, 1 bowl of sugar, and 1 bowl of filtered water in a ratio of 1:1:1. Then, bring the mixture to a boil and let it cool.

  • Pickle the radish with soy sauce

    Prepare a glass jar or a plastic jar with a lid, wash it thoroughly and let it sun dry until the jar is completely dry, or you can blanch it in boiling water.

    After drying, bring the radish, garlic, and chili inside to prepare for pickling.

    Layer the radish, garlic, and chili alternately until finished. Then, pour the soy sauce mixture in, close it tightly, and leave it at room temperature for about 1 day before you can eat it!

  • Final Product

    You can serve pickled radish with white rice, braised meat, bánh chưng, or bánh tét, all of which are very delicious and appealing. The radish is crispy, fragrant, not bitter, and has a moderately salty-sweet and slightly spicy flavor that will give you an incredibly wonderful taste experience!

How to Preserve Pickled White Radish

  • After 1 day, when the pickled white radish has reached a suitable salinity, you should put the jar of radish in the refrigerator to store it longer. When eating, just take out a sufficient amount and close it tightly.
  • With this preservation method, pickled radish can last about 5 – 6 months while still maintaining its crispness, deliciousness, and the characteristic flavor of the dish.
