How to Prepare Turmeric Braised Barramundi

  • Prepare and Marinate the Barramundi

    Buy barramundi, use a knife to remove the guts, cut the gills, and gently rub salt or lime on the fish’s body.

    Continue to wash the fish with vinegar, then rinse 1 – 2 times with clean water, and then place it in a basket to drain.

    When the fish is drained, marinate it with 1/3 tablespoon of salt, 1/3 tablespoon of seasoning powder, 1/4 tablespoon of monosodium glutamate, 1/2 tablespoon of sugar, 1 tablespoon of fish sauce, and 1/3 tablespoon of turmeric powder.

    Use chopsticks to stir well, then marinate the fish for 30 minutes to allow it to absorb the spices.

    Note: If you do not use turmeric powder, you can also use fresh turmeric that has been crushed. Then use it directly for marinating or filter the turmeric juice and then braise the fish. Filtering the turmeric juice for braising will help the braising liquid become clear and the fish absorb the spices more attractively.

    Peel the shallots and garlic, wash them clean, then finely chop.

    Put a pan on the stove, add 2 tablespoons of sugar and 3 tablespoons of cooking oil, stir evenly until the sugar thickens, then add minced onion and garlic to sauté until fragrant.

    Continue to add the marinated fish into the pan and cook on medium heat, using chopsticks to stir so that the fish is evenly coated with the caramelized sauce. When the fish meat starts to firm up, add warm water to cover the fish slightly, reduce the heat and continue to simmer.

    When you see the sauce thickening and reducing, add 2 tablespoons of fish sauce and the bird’s eye chili along with 1/2 teaspoon of pepper, cook for another 5 minutes and then turn off the heat.

    Note:

    • If you like it spicy, you can finely chop the bird’s eye chili or crush it before adding it to the fish pot.
    • You can use coconut water instead of plain water to enhance the aroma and make the dish more flavorful.

How to choose good tomatoes

  • You should choose tomatoes with smooth, plump skin, bright red color, and green stems.
  • Avoid tomatoes that are bruised or have small black spots, or those that are unevenly colored with both green and red.
  • If they feel too soft or too hard when touched, or if there is juice leaking out, do not buy them as they may be spoiled.

  • Prepare and Marinate the Fish

    Buy mullet and use a knife to remove the intestines, cut off the gills, and gently rub salt or lime on the fish’s body.

    When the fish is drained, marinate it with 1/2 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, 1/3 teaspoon of pepper, 1/2 of chopped shallots and minced garlic, 1 tablespoon of fish sauce, and 1 tablespoon of rice vinegar.

    Remove the roots from the scallions, wash them clean, and cut them into bite-sized pieces. Wash the bird’s eye chili, then crush it.

    Place a pan on the stove and add 2 tablespoons of annatto oil, then add the remaining chopped garlic and onion to sauté until fragrant. Continue by adding the chopped tomatoes, 1/4 tablespoon of sugar, and 1/4 tablespoon of salt, stirring well.

    When the tomatoes are slightly cooked and have released their color, add the marinated fish, using chopsticks to stir so that both sides of the fish absorb the annatto oil. Gradually add 1 cup of warm water, 2 tablespoons of fish sauce, the quartered tomatoes, and the bird’s eye chili to stew on low heat.

    When the fish stew sauce reduces and thickens, add the chopped green onions and then turn off the heat to finish.

How to choose delicious mullet fish

  • To select fresh and tasty fish, you should choose fish that are still alive and swimming vigorously. Fish with short and round bodies are female mullet that have many eggs.
  • Delicious mullet usually has red gills, shiny scales, firm meat, and clear eyes. When placed in water, the fish sinks, and the flesh has good elasticity.
  • Do not buy fish that feel slimy when touched, have an unpleasant odor, or have dark, pale flesh, as these are fish that have been dead for a long time and may be spoiled.

Tips to remove turmeric stains from hands

  • Using milk: pour a little milk into a bowl, then use cotton to slowly apply it to the stained area of the skin.
  • Using water and sugar: put sugar in a bowl, add just enough water to cover the sugar, then stir with a spoon until dissolved and use cotton to apply to the stained area.
  • Using 90-degree alcohol: drop a few drops on the stained area that needs to be cleaned, and rub with your hands or a cloth. Repeat until the turmeric stain is gone.
