How to Prepare Fish Sauce with Pork Belly

  • Prepare the Spices

    Clean and prepare all the ingredients used with the dish. For ginger, peel it cleanly, then slice it into thin strips.

    For shallots and garlic, peel them and chop finely.

    Wash the chili peppers and chop them finely. If you cannot handle too much spice, remove the seeds from the chili before chopping.

    After preparation, place all the ingredients on a plate.

    To remove the smell from the pork belly, soak the meat in diluted saltwater for about 5 minutes and then wash it several times with water.

    Put the fish sauce into a large bowl, then add the prepared spices and mix well. Add 2 teaspoons of sugar to reduce the saltiness of the fish sauce. You can adjust the sugar to suit your taste.

    Finally, add the sliced pork belly into the bowl and mix well so that all ingredients blend together.

  • Steam the Fish Sauce

    Place a pot on the stove, depending on the size of the pot, add about 1 – 2 bowls of water, then place the bowl of fish sauce into the pot. Cover and cook on high heat.

    After about 15 – 20 minutes, when the fish sauce is cooked, add the chopped green onions and sliced chili on top, and it’s done. The steamed fish sauce with pork belly is ready to be served on the dining table.

  • The identifying feature of fresh eggs is that their surface has many speckles, and they should not feel smooth to the touch.
  • Additionally, you can shake them; if they do not make a sound or only make a very faint sound, you should choose to buy them because they are still fresh. Conversely, if they make a sound, you should not choose them.
  • Another tip is to hold the egg up to the light; fresh eggs will show a large, clear circle in the center when you look at them.

  • Chop fish sauce and tomatoes

    Peel and wash the shallots, then finely chop. Wash the chili and chop it small.

    Peel the garlic, mince it, half of it will be sautéed with shallots, and the other half will be used to marinate the meat.

    Wash the green onions, cut off the white part about the length of one finger, and chop it small for marinating the meat. The green part will be chopped small for marinating the fish sauce.

    Then, add 2 tablespoons of sugar, 1/2 teaspoon of seasoning powder, 1 tablespoon of cooking oil, and a mixture of minced garlic, onion, and chili into the meat bowl. Mix well to let the meat absorb the seasoning.

    Heat a pan on medium heat and add 1 tablespoon of cooking oil. When the oil is hot, add the shallots and garlic to sauté until fragrant. Next, add the marinated meat mixture and stir-fry for 5-6 minutes until the meat is firm and cooked. Finally, add the tomatoes to the pan, stir well for about 1 minute, then turn off the heat.
