How to make Salted Caramel Sauce

Cook the sugar
Place a pot on the stove, add 200g of sugar, 1/8 teaspoon of cream of tartar, and 3 tablespoons of water. Stir well to ensure the sugar absorbs all the water.
Heat the mixture on low to medium heat, stirring frequently. When the sugar has completely melted and starts to boil, continue to cook until the mixture turns an amber color.
Note: Be careful as melted sugar can easily cause burns.

Make the sauce
When the sugar mixture is boiling and has reached the desired color, reduce the heat to the lowest setting and add the unsalted butter. Stir until the butter has melted.
Slowly add the heavy cream and stir well.
Note:
- Make sure the unsalted butter and heavy cream are at room temperature before adding them to the mixture.
- Be careful when adding the heavy cream, as the mixture will bubble up and steam. Stir continuously to prevent the ingredients from burning.
When the sauce has blended together, add 1 tablespoon of salt, stir well, and then turn off the heat to let it cool.

Final Product
The salty caramel sauce when finished will have a beautiful shiny golden brown color. The sauce has a slightly thick texture and will not harden when stored in the refrigerator. Using caramel sauce in cake recipes or served with ice cream will add a very interesting sweet-salty flavor to the dish.

Cooking Sweetened Condensed Milk
When you buy sweetened condensed milk, tear open the packaging and keep the metal can intact.
Place a pot on the stove, add enough water to submerge the can of milk. Put the entire can of milk into the pot and boil over high heat until the water starts to simmer. Then lower the heat to medium and cook for about 2 – 3 hours.
Note: You will need to add more water to maintain the water level in the pot to keep the metal can submerged.

How to store caramel sauce
