Fresh tofu skin 100 gr Tofu 150 gr Seaweed 50 gr Shallots 20 gr Chili paste 20 gr Cashew oil 10 ml Pepper 5 gr

Pot, non-stick pan, gas stove, aluminum foil, lotus leaves (or banana leaves).

How to prepare Vegetarian Crab Cake

  • Prepare the ingredients

    Wash the tofu skin thoroughly 2-3 times with water, then boil it for 2 minutes in boiling water to make the tofu skin soft while still retaining its chewy texture. After that, cut the tofu skin and tofu into small pieces and squeeze out all the water from both ingredients.

    Peel and slice the shallots. Cut the seaweed into small pieces.

    Tip: The tofu skin should not be minced, as the crab cake will not stick together well and won’t taste good.

  • Mix the ingredients

    Add oil to the pan, when the oil is hot, add the shallots and sauté. When the shallots are nearly golden, add the annatto oil and sauté together.

    For the crab cake mixture, season with 1 teaspoon of sugar, 1 teaspoon of seasoning powder, and 5g of pepper along with the sautéed shallots, then mix all the ingredients until the mixture has a chewy texture.

  • Steam the crab cake

    Place the entire crab cake mixture onto a lotus leaf, press tightly into a square shape; the tighter you press, the chewier and tastier the cake will be.

    After wrapping the cake with the lotus leaf, wrap it with 4-5 layers of aluminum foil to prevent water from getting into the cake.

    Steam the cake for 30 minutes to ensure it is cooked evenly.

How to choose delicious straw mushrooms

Choose straw mushrooms that are round, still budded, and do not choose those that have fully bloomed; black straw mushrooms will taste better than white ones.

For bánh canh, you can buy it ready-made from the store or make it yourself at home.

  • Prepare the ingredients

    Peel the carrot, cut it into thin slices; if desired, you can carve the edges into a beautiful flower shape. Remove the husk from the sweet corn, clean the corn silk, and cut into 3-5 cm pieces. Clean the young corn and leave it whole. Wash the salted cabbage clean, and cut it into strips or round slices as you prefer.

    Peel the shallots and slice them. Cut off the stems of the straw mushrooms, soak them in diluted salt water for about 10 minutes to prevent the mushrooms from smelling and to remove any dirt. Wash the bean sprouts and herbs clean. Wash the green onions clean and cut into sections.

  • Sautéing ingredients

    You pour oil into the pan, when the oil is hot, you add chopped purple onion to sauté until fragrant.

    When the onion is golden, add straw mushrooms, vegetarian crab claws, and chopped green onion into the pan and stir evenly with 1 teaspoon of vegetarian seasoning.

  • Making the broth

    You dissolve the tapioca starch with 20ml of water to ensure the starch is evenly dissolved and does not clump.

    You place a pot of water on the stove over high heat, then add carrots, radishes, young corn, and sweet corn, and cook for about 1 hour for the water to have a light sweetness. After 1 hour, you add the vegetarian crab claws and straw mushrooms, then boil for an additional 5 minutes.

    Finally, you add annatto oil along with the tapioca starch and stir well. Season with chopped green onion and fried onion to make the broth more aromatic.

    Small tip: To keep the broth clear, do not cover the pot while cooking!

    If you like cooked bean sprouts, add them first, then add the noodles, and decorate with vegetarian crab cakes, vegetarian crab claws, slices of sweet corn, straw mushrooms, green onion, pepper, and herbs… then pour the broth over, serve with soy sauce and sliced chili for a perfect meal!
