How to choose fresh pork
- Good pork will have a bright pink color, dry membrane, slightly firm surface, and tender texture.
- When pressed, the meat should feel elastic and dry.

- Alternatively, you can also grind it yourself using a meat grinder at home to ensure hygiene and quality when using.

Prepare the ingredients
Peel the outer skin of the garlic and shallots, remove the stems from the tomatoes, wash everything thoroughly with water, and then chop finely. Trim the roots of the green onions, wash them, and chop them small as well.
Tip: If you have a blender, you can put the tomatoes in and blend them for quicker preparation. Remember to blend just enough, not too finely, so that you can still taste the tomato in the dish.

Boil the pasta
Place a pot on the stove over medium heat, add 1.5 liters of water. Add the pasta to the pot along with 1 tablespoon of cooking oil to prevent the noodles from sticking together and to make them shinier. When the water boils, continue to keep it on the stove for about 2 to 3 minutes.
Remove the pot from the stove, prepare a clean basket and pour the pasta into the basket, then rinse under cold running water. After that, set the pasta aside to drain.
Note:- If the water does not fully cover the pasta, wait until the bottom noodles start to soften, then use a pair of chopsticks to stir and push the noodles on top down below. Do not break the noodles in half.
- To check if the pasta is cooked, pick a strand of pasta, and gently press it with your fingertip; if it is still chewy and hard to break, continue cooking on the stove for about 2 more minutes until soft. If the pasta breaks easily and is soft, it is done.
- Depending on your preference for softer or firmer pasta, adjust the boiling time accordingly.

Sauté the meat
Place a pan on the stove, add 1 tablespoon of cooking oil to the pot and sauté the minced onion and garlic until fragrant. Then add the minced meat and stir well. Season with 2 teaspoons of seasoning powder and 1 teaspoon of salt.
Continue stirring until the meat is crumbly and not clumped together, then transfer the meat to a plate and set aside.

Make the tomato sauce
Continue using that pan, add 1 tablespoon of cooking oil to the pan, when the oil is hot, add the minced tomatoes and stir for about 2 minutes.
Season with 1 tablespoon of sugar, 1 teaspoon of seasoning powder, and 2 teaspoons of salt. Stir on low heat for about 15 minutes until the tomatoes are soft.
Note: At this step, you can add about 1/2 cup of water (rice bowl size) to the tomato pot and keep the heat low to help the sauce become smooth and not too thick. -
Making minced meat tomato sauce
Add the cooked minced meat to the pot of tomato sauce and stir well. Adjust the seasoning of the sauce to suit your family’s taste, then add the chopped green onions, stir once, and turn off the heat.
