How to prepare smoked ham hocks

Prepare and marinate the ham hock
To remove the smell of the ham hock, add about 2 teaspoons of salt to scrub the surface, then rinse thoroughly with water. Once the ham hock is clean, place it in a bowl to prepare for marinating.
Next, marinate the ham hock with 6 tablespoons of smoked spice, 6 tablespoons of BBQ sauce, 6 tablespoons of chili sauce, 70g of seasoning, 70g of sugar, and 2 tablespoons of ground pepper.

Carefully place the pork knuckle in the pot, add all the chopped onions and shallots, and pour in enough water to submerge the pork knuckle. Season with 5 teaspoons of salt, 5 teaspoons of sugar, and 2 tablespoons of BBQ sauce.
Gradually place the pot into the rice cooker to boil, and once the water is boiling, turn the pork knuckle to ensure it cooks evenly. Then, continue boiling for about 2 hours.

After 2 hours, take the pork leg out, remove the mesh bag that was used to secure the pork leg. Apply a layer of smoky seasoning evenly over the surface of the pork leg and place it in the oven.
Set the oven at 150 degrees Celsius and grill the pork leg for 10 minutes. After 10 minutes, open the lid, turn the pork leg to ensure that it doesn’t burn while grilling, and continue grilling for another 10 minutes until the pork leg is done.
Wait for the pork leg to cool completely, then you can store it in a vacuum bag for long-term preservation.
