How to Prepare Crispy Fried Duck Tongues

  • Prepare the Duck Tongues

    First, rinse the duck tongues in water, then add 50gr of salt and use your hands to rub them thoroughly so that any dirt and unpleasant odors are removed.

    Next, peel off the white part of the duck tongues so that there is no unpleasant smell when eating.

    You put water on the stove; when the water boils, add the duck tongue to boil with ginger for a more delicious flavor.

How to Make Fried Duck Tongue with Lemongrass and Chili

  • Prepare the Ingredients

    You rinse the duck tongue with water, then add 50gr of salt and massage it to remove all the dirt from the duck tongue. You separate the white membrane on the tongue so that it does not smell when eating. Next, rinse it under clean water 4 – 5 more times.

    You peel the ginger, wash it, and then slice it thinly. Wash the lemongrass and chili, then finely chop them.

    Pour 200ml of cooking oil into the pan, when the oil is hot, add the duck tongue and fry over medium heat for about 10 minutes. While frying, turn the duck tongue regularly to ensure it becomes golden and crispy.

How to choose delicious duck tongues

  • You should choose duck tongues that are pinkish white. When touched, the tongue should still be firm and chewy, with a certain degree of elasticity, and have no strange smell.
  • Absolutely avoid buying and using tongues that are dry, have unusual colors such as yellow, dark purple, or greenish, have an unusual foul smell, or are oozing yellow fluid, as these tongues may be old and in the process of decomposition.

How to clean duck tongues without odor

  • When you buy duck tongues, cut off the part of the throat that is still attached to the tongue, sprinkle with salt, then scrape off the slimy layer on the tongue, and rinse the duck tongues with cold water.
  • Place a pot of water on the stove, boil until it is boiling, then add 30ml of vinegar and 1 tablespoon of salt, put the duck tongues in and blanch until the water boils again, then remove and rinse with cold water.
  • Massage the duck tongues with 30ml of white wine and 10g of minced ginger, massage evenly for about 15 minutes, then rinse again with clean water, and let them drain.
