  • Prepare the pork ribs

    Purchase the pork ribs and wash them thoroughly. Then, to remove the odor, soak the pork ribs in a diluted saltwater solution for about 2 – 3 minutes, then take them out and let them drain.

    • Method 1: Rub the ribs with salt for about 2 – 3 minutes and rinse again with water to eliminate the fishy smell.
    • Method 2: Using vinegar or alcohol to wash can also remove the odor of the ribs.
    • Method 3: You can also remove the odor of the ribs by blanching them for 2 – 3 minutes and then rinsing them with clean water.

    Marinate the pork ribs with 1 teaspoon of seasoning powder, 1/2 teaspoon of ground pepper, 1 teaspoon of sugar, and 1 tablespoon of salt. Mix well and let sit for 15 minutes for the spices to absorb.

    Put a pot on the stove, add 2 tablespoons of cooking oil, and heat it up. Add the chopped shallots and sauté until fragrant.

    Add the ribs and stir-fry briefly, then add 700ml of water (about nearly 2 bowls of soup) and cook for 20 minutes until the ribs are cooked. During simmering, remember to lower the heat and skim off the foam regularly.

    Add the chopped taro and cook for about 10 minutes until the taro is soft.

    You can test by using chopsticks to poke the piece of taro; if the chopsticks penetrate easily, the taro is cooked.

    Add the water spinach and cook for another 1 – 2 minutes. Adjust the seasoning to taste, sprinkle with green onion, then turn off the heat.
