How to choose fresh guava
- You should choose guavas with a slightly rough, uneven skin and clear veins. These are the fruits that have more flesh and fewer seeds.
- Guavas with fresh stems, not dry, and green leaves are freshly picked, crisp, and juicy.
- Guavas should feel firm in hand; when pressed, they should have a moderate firmness to be good guavas.
How to choose fresh shrimp
- You should not buy shrimp with uneven colors and dark shells. Instead, choose shrimp with transparent shells and no sliminess.
- Fresh shrimp usually have a normal curved body, their shells are not peeling, and the heads are firmly attached to the bodies. Shrimp with spread tails are those that have been injected with chemicals.

How to choose fresh pork
- Good pork is usually dry and has high elasticity. When you press your finger into it and pull it out, it should not leave a dent.
- Good pieces of pork, not injected with chemicals, usually have a bright pink color, firm texture, and should not have a strong unpleasant odor.

How to make Shrimp and Pork Salad with Guava

Prepare Shrimp and Pork
Buy pork and soak it in a bowl of diluted salt water for a few minutes, then take it out, rinse it with clean water, and let it drain in a colander.
For fresh shrimp, cut off the head, tail, legs, and antennae. Remove the intestine and the shell, then rinse them clean with water.
Quick way to remove shrimp intestines:- Quickly remove the shrimp intestine by using a toothpick to pierce horizontally into the shrimp body at the second joint from the tail. Then gently pull out the exposed shrimp intestine with your hands.
- Alternatively, you can use a knife to slice along the back of the shrimp and take out the intestine.

Prepare Other Ingredients
Peel 1 onion, wash it clean with water, and cut it into small slices. Soak 3/4 of it in a mixture of vinegar and sugar, keeping the remaining part for boiling the pork.
Similarly, peel 1 carrot and cut it into thin strips. Then soak it in the vinegar and sugar mixture.
Wash 2 guavas clean and cut them into small pieces lengthwise.
After washing the Vietnamese coriander, chop it finely. Peel the ginger and slice it.
Peel the garlic, crush it, and chop it finely. Wash the chili, cut off the stem, remove the seeds, and then chop it finely.

Boil the meat
First, bring a pot of water to a boil and add sliced onion and ginger (you can substitute onion with green onion or shallots). Season with a little salt and monosodium glutamate.
Then, add the prepared meat and boil until cooked. This method helps the meat to be more fragrant and delicious.
After boiling, slice the meat into thin pieces.

Steam the shrimp
Put the prepared shrimp into a steamer along with some lime leaves and sliced ginger. Wait a few minutes, when the shrimp is cooked, take it out and peel off the shell.
Note: If you do not want to steam, you can boil the shrimp.

Mixing the dipping sauce for the salad
First, add 3 tablespoons of filtered water and 2 teaspoons of sugar into a bowl, then stir well until the sugar dissolves.
Next, add 2 teaspoons of lime juice and 2.5 tablespoons of fish sauce.
Finally, add minced garlic and chili, then stir once more.
The dipping sauce has a sweet and sour taste, with a beautiful color that enhances the flavor of the salad.

Add all the prepared ingredients including: meat, shrimp, onion, carrot, and Vietnamese coriander into a bowl. Then, use the dipping sauce you just made to mix everything together so that the flavors penetrate the ingredients.
