- First, to choose fresh bamboo shoots, you should select those that are rough in shape, evenly sized segments, and have straight stems.
- Fresh bamboo shoots should have thin, slightly shiny skin. They have a distinctive aroma and a yellow-brown color, and when pressed lightly, they should feel slightly firm.
- Avoid choosing bamboo shoots that are too white, have curved stems, or overly large buds, as these are usually older shoots, which tend to be fibrous and less crunchy when eaten.
How to choose fresh, chemical-free shrimp
- When choosing shrimp, you should select those that are fresh, with a transparent shell and a slight smell of seawater, not fishy.
- You should choose shrimp with a firm body, which bounce slightly when touched, straight bodies, bright eyes, and the head tightly attached to the body.

Prepare the bamboo shoots
Fresh bamboo shoots are peeled and then cut into small pieces using a knife, rinsed briefly with water, and then placed in a pot to boil on high heat with 1 teaspoon of salt.
Boil the bamboo shoots for about 15 – 20 minutes, then rinse them with water about 3 – 4 times so that the bamboo shoots are no longer bitter, then remove them into a colander to drain.
Once the bamboo shoots are drained, cut them into thin strips and place them in a colander.

Prepare the pork

Prepare the shrimp
Wash the shrimp thoroughly, put them in a pot of boiling water over high heat for 5 – 7 minutes until cooked. Then, remove the shrimp to a bowl to cool, then peel and cut the shrimp in half and place on a plate.

Herbs should be picked for fresh young leaves, soaked in diluted salt water for about 5 minutes to clean, rinsed with water, and then drained in a basket.
Peel the garlic, remove the stems from the chili, wash them thoroughly, then put the mixture into a mortar and crush it finely. Pre-roasted peanuts should be shelled and then crushed slightly in the mortar and scooped out into a bowl.

Stir-fried pork
Place a pan on the stove, add 2 tablespoons of cooking oil to the pan. Wait for the oil to heat up, then add all the minced garlic and chili and sauté until fragrant and golden over high heat.

Put the pre-cut bamboo shoots into a small bowl, then gradually add the stir-fried pork and boiled shrimp, mixing well so that the bamboo shoots, pork, and shrimp absorb the seasoning evenly. Next, add the herbs and mix once more.
