How to prepare Sour and Spicy Red Snapper Hotpot

Preparing ingredients
Take half a ginger root, wash it clean, peel it, and slice it thinly.
Clean the red snapper, scale it, wash it with water, then take a tablespoon of salt and the sliced ginger to rub all over the fish’s body and belly for about 5 minutes, then rinse it again with water to remove the fishy smell. Next, cut the fish into 3 to 4 pieces depending on whether the fish is large or small.
Pineapple, peel, remove the eyes, and cut into small pieces. Tomatoes, wash clean, and cut into wedges.
Cut the calamondin in half. Crush the lemongrass and cut it into pieces about 5 cm long.
Peel the garlic and shallots, and mince them along with the remaining half piece of ginger. Wash the rice paddy herb and cilantro, and cut them into pieces about 1 cm long.
Peel the peppermint, wash it clean, and cut it into thin slices.
Break the water spinach and water mimosa into bite-sized pieces, soak them in diluted salt water for about 10 minutes, then wash them again with clean water and let them drain.

Marinate the fish
You place the pot on the stove, heat 1 tablespoon of cooking oil, and sauté half of the minced garlic until fragrant. Then, take the sautéed garlic out into a bowl, using half to marinate the fish, and keeping the other half separate.
After cutting the fish into pieces, you marinate it for about 10 minutes with the sautéed garlic, 2 teaspoons of seasoning, 1 teaspoon of sugar, and 1 sliced chili.

Cook the hot pot
Using the same pot where you sautéed the garlic, add all the minced garlic, minced shallots, and minced ginger to sauté until fragrant, then add the lemongrass and stir until aromatic, then add the pineapple and tomatoes and stir-fry for about 2 minutes before pouring in 1 liter of water and bringing it to a boil.
While waiting for the water to boil, squeeze the calamondin to extract the juice, discarding the seeds.
When the water boils, add 2 tablespoons of sugar, 1 tablespoon of seasoning, 1 teaspoon of salt, and 2 tablespoons of satay, stir well, then add the calamondin juice and stir again.
Once the water comes to a boil again, add the fish and cook for another 5 minutes.

Prepare the ingredients
The red snapper you buy should be cleaned, scaled, and gutted, rinsed with cold water, then rubbed all over with salt and ginger to eliminate the fishy smell, rinse the fish again, and cut it into 3 pieces. Marinate the fish with 2 teaspoons of seasoning for about 30 minutes.
Shallots are peeled, cleaned, and chopped finely. Chili peppers are sliced. Tomatoes are cleaned and cut into wedges.
Pineapple is peeled, eyes removed, and cut into bite-sized pieces. Green onions are cleaned, and the ends are cut separately. The green parts of the green onions, dill, and coriander are chopped finely.
The hotpot vegetables include: water spinach, water lily, shredded banana flower, and bean sprouts which should be cleaned, soaked in diluted salt water for about 10 minutes, rinsed again with clean water, and drained.

Cook the broth
Pork bones are cleaned, blanched in boiling water for about three minutes, then taken out and rinsed again with cold water.
Put 1.5 liters of water, 1 teaspoon of salt, 2 shallots, and the cleaned pork bones into a pot, simmer for about 1 hour on low heat from the time the water boils.
After simmering the broth, strain it through a sieve to remove the residue and small bones for a clear broth.
